Creme Caramel

This is really yummy and refreshing or comforting, depending how you view it - and how you eat it.

Soft fruit of any sort - can be frozen
Glass of red wine (optional - though alcohol will burn out)
Sugar or sweetener
Cold water to cover fruit.
Lemon Juice
Cinamon
Either Agar agar or some other clear thickener
Whipped cream or creme fraiche to serve - or single elmlea

Put all except the thickener into a saucepan and bring to the boil, then simmer for a while until fruits are completely mushy,
Whizz in a blender and then pass through a sieve back into the pan. Heat through and put thickener in in the usual way and keep stiring until thickened. Can be served hot or cold - great for making ahead of time.

Alternatively you could leave the fruit whole, though this is not so easy on the mouth. Just remember to remove the cinnamon stick!

Serve with cream. Enjoy and feel virtuous.

Take six glasses. Make up some Angel Delight - toffee flavour. Divide it amongst the glasses. Divide a can of cherry pie filling amongst the glasses. Top with whipped cream. Sprinkle with chocolate flake.
My kids favourite pudding! And no one ever guesses how easy it is.

Sherry Trifle.

You'll need:

Trifle sponges/biscuits (from any supermarket)
Tin of pears
Tub of ready made custard
Tub of double cream
A spot (or more!) of sherry

Put the trifle sponges in a dish
Pour some sherry over them
Cut up the tinned pears and put them on top
Pour the custard over
Whip the cream and put it on top

That's it.

You can crumble a Flake over the top, or put some Smarties on it.

Tastes better if you leave it for an hour or so before eating.

Yum!

My favourites are lemon mirangue pie, Vienetta, trifle without cream, ice cream with mini mirangues and choc sauce, and also chocolate log. All good for people that don't like Christmas pud, cream, nuts or spicy fruit things.

a nice white chocolate mousse with a raspberry sauce would be nice.
it's easy to make its just double cream, white chocolate and merengue.
method:
melt chocolate
whip cream until it peaks
fold in chocolate
make mergenue and gently fold in the chocolate and cream
it should be nice and light
place in the fridge and serve chilled
