I purchased some whole coffee beans for a friend for Christmas. They're in a paper bag (not lined) that seals pretty securely at the top with a twist-tie of sorts. How long will they keep? I wasn't planning on giving her her gift until Friday, but I'm worried about the beans. Right now they're in the same paper bag at room temperature. Will they keep this way (without going stale) until Friday, or should I give them to her, or put them in an airtight container in the fridge? Help!

The ideal storage is in a vacuum sealed bag, if this is not how they came...placing them on the inside of the fridge door will keep them fine however this is a very short term suggestion as lengthy storage this way causes moisture which will eventually attack the beans and lessen their flavor. Beans stay fresher longer than ground coffee so they should be perfectly ok to give on Friday without worry especially if they are a quality product, without doing anything special as far as storage goes, provided the bag is dark and you aren't placing them near any heat source.

Store them in an airtight container, but not in the fridge. The cold will cause them to lose the oils that give the beans their good, fresh taste. They should be fine. They should be stored in a dark cool place (like in a cupboard) until you are ready to give them to her.

They say not to, but I always store my coffee in the freezer, It doesn't freeze, and it keeps for a very long time.

They should be ok. You can put them in the fridge though. That does keep them fresher longer.
