Personally, I don't like to say see you for some reason. So normally I will use either ok or by or some combination thereof. When I do say see you, I will have something added, like see you tomorrow.

You have a few options. You can say "see you" back to your friend. Or you can say "talk to you later" or "later" or "bye." You have many options. Also, you can give a short wave. If someone says "see you" to me, I usually say "see you" or "see you later."
