Second cousin.
Your father's cousin is your first cousin, once removed. Your dad's cousin's offspring are your second cousins. If they have children, they'll be your second cousin, once removed.

Their your second cousins, but when you greet them you call them by their names- don't have to use the second cousin stuff.

He is your third cousin, because it takes 3 connections to get to him. You-your dad-your dad's cousin-him.
He would be your dad's second cousin.

I believe it's second cousin, once removed, but what difference does it make, he's still family, isn't he?
