No matter what I serve for dinner, someone is always complaining. Kids are finicky and husband only wants low fat meals. Any suggestions?

A warm beef or chicken salad. Use some stir fry type meat, and cook it in a marinade or crumbing to your liking. Throw together a nice big mixed salad, with whatever suits you. Lettuce, mushies, tomato, capsicum, bean shoots, carrot, cheese, onion, a few bacon chips for a different flavour, olives, sundried tomatoes, literally whatever takes your fancy.

Serve the salad on a plate, put the warm meat pieces on the top of the salad, drizzle with some dressing you like, and they you have it. A warm meat salad.

Kids might not want this but I love it. It's stirfry w/ fresh vegetables. Sometimes you can find the little kits that include everything you need, I like to make it fresh though with organic vegetables.
