Obviously, there is something off.

Check out the link I provided, it may help. In addition, be sure that your ingredients such as baking soda, baking powder, and flour are not old. This can have an affect.

When i made chocolate chip cookies using a store off brand instead of toll house, the exact same thing happened to me. They turned out really puffy and lacked flavor. I could only figure that something in the recipe was "off" and went back to my old stand by after that.

In addition, even the type of pan you use can have an affect. Are you using the shiny baking pans? If you are using the dark ones, you cookies can turn out much differently.

Less butter, and cook them flat on a iron pan. Dont use baking soda. Mine come out perfect everytime.

Some cokies you want to come out soft, such as white belgian chocolate chip cookies with walnuts. My speciality.

There is probably too much baking powder in the recipe. Baking powder helps "fluff" up cookies, cakes, etc.

If you want them crispy, use butter instead of shortening.
