After he kills it what do you do then and how would you cook it. He has never done this before but as there is a shortage of Turkey in The Phillipines this is the only way he can have turkey for christmas dinner.

killing it should be done quickly, whatever method.
Wringing its neck is hard because the neck is long and if its the first time you have done it you will be a bit nervous because of your own fear.
Get a knife, a big one, hold it down and SMACK.....
make sure its a sharp one, chop its head off.
The most important thing is to not chase it around for ages, that will get its adrenalin going and that will make the meat tougher.
Catch it off gaurd(or make friends with it).....
Next, hang it upside down ( piece of string, feet, etc) and leave it.
Thats cos it will flap for a while - muscle contraction- and will put you off eating it!
Put a fairly large pot on the stove and heat some water.
Fifteen minutes later, or when the water is just too hot to put your hand in,-----
Put the turkey in the water for about 20 seconds.(take water off heat)
Take it out and just rub the feathers off.
Use your own judgement and keep dunking it until you manage to de-plume .
Wing feathers are hardest to take off and may need hard pulls (a pair of pliers works well here)
To gut....
Take a sharp knife,
Imagine its @rse like an o.
Cut around this o about 1cm out, just into the skin and muscle.
Pull the o out of the body and tie a knot in it (you'll know what I mean when you are there!)
Now you have the end of the digestive tube tied off, cut into the rear cavity but avoid the tube and you will be able to stick your fingers in and feel around the intestines.
Work them lose with your hand whilst pulling on the knot you have tied, careful of sharp nails!
Reach in as far as you can go, which should be most the way in.
Try and pull out without tearing the guts, usually needs a hard pull and rip with the hand that is inside.
Once intestines are out there is little risk of contamination so get the heart and other organs out the best you can.
The crop (hard sac of grain) found near the throat should not be split open, if it is then wash immediately, removing all traces.
Wash the carcass in cold water (drinkable) and try and scrape out the blood sacks located near the backbone.
Ready to cook.
In my opinion its best to do this the day before (if you have a fridge to put it in) as you may not feel like eating it at this stage.
Cooking- roast, breast down, put a lemon inside(slice into it) and baste with its juices every 20 mins.
Cover with tinfoil if you have it.
It will take twice the time of a chicken (I dont know your oven do I)
Use the heart, kidneys and neck bone in the gravy stock.

Best way to do this is to take the turkey by the legs and swing it against the wall making certain to hit the head against the wall to stun the bird. Next take a solid heavy blade and cut the head off, having stunned the bird it should be easy. You then hang it upside down for a few minutes to let the blood flow out of the body. Place the bird in warm water for about 30 minutes or so to soften the skin to begin plucking, then de-feather. Clean out the guts thru normal methods, cut off the feet and cook.

chop off head and throw body under bucket as it will flop around for a few minutes

drop in huge tub of boiling water for about 5 minutes to loosen feathers

take out of water and pluck off (pull out) and discard feathers

open up back end just like a store turkey and take out the insides and save the things you want to make dressing and gravy with (Give the rest to the dog as a treat)

Inject the turkey with marinade as otherwise it will be dry and chewy

cook at a lower temperature than you would a store turkey and for a longer time basting often (Test done with a thermometer)

Then eat and enjoy

Easy - snap its neck, rip all the feathers off it, clean and stuff it, cook for about 6 hours and then eat with lovely roast spuds and veg, washed down with a nice glass of sparkling wine!

Tie it's feet together, hang it upside down by its' feet, then cut off the head and leave to drain. Njoy

Ask a butcher to do it, though you might have to invite the butcher for Christmas lunch!

...ring its neck then pluck it...remove the innards and cook...eat well...happy hols...do not cut its head off less you want it running around the yard with no head for a minute or two..it's true..i have seen it happen...and none too pleasant...happy eating...xxx
