Yes, you do need a visa.
you need to have a passport: Valid 6 or more months with clear visa page.
1 Peoples Republic of China Visa Application
1 Color Photograph 2" x 2" with white or light background
1 Detailed business letter or invitation from company in China (business purposes only)
You can obtain a single, double or 6 month multiple entry visa. To obtain a one year multiple entry visa you must have a prior China visa in your current passport to be considered for one.
The China Embassy or Consulates will no longer accept visa applications by regular or express mail or any other delivery services (FedEx, DHL, UPS,). Applications must be submitted in person, by an agent of the traveler or a visa service authorized to do business at the China Embassy and Consulates.
For single entry, $50; double entry is $75, multiple entry for 6 months is: $100.
The regular processing time is 4 working days. For express service, additional fees of $30 for 1 working day processing, and $20 for 2-3 working days processing will be charged.

i've been there 3 times and hope to go there again in february 2007. i use expert visa at expert visa.com. you can download the forms or even call them to make sure you've filled out the forms correctly, it usually takes about 1 week from the time they get the application. they are in chicago, illinois. their phone number is 1-312-663-6667. if you plan to enter, leave and then re-enter china more than once you need a multi-entry visa. a little more costly but no problem. ask for larry, he did an excellent job.

Anywhere from same day to 7, depends on if you live near a consulate and want to trek there for same day service, or hire a visa agent to process it for you.. In most cases, a visa agent will save you time and money.
A good visa service I use is http://z-visa.com great information about travel to China and visa information. Their number is (917) 421 - 9639
