The Rosso Mentaiko Spaghetti is a pasta dish with a cream-mayonnaise-based that's slightly spicy and mixed with ebiko (the orangey fish roe you find in sushi), topped with nori (seaweed). Well without the ebiko, I basically couldn't make Mentaiko Spaghetti :( So I improvised and decided to use corn and tuna flakes instead.



There, the fruits of my half hour labour. Actually it's pretty quick to make (especially if just using ebiko) probably about fifteen minutes. I didn't actually use proper measures so won't be able to give the exact recipe but here's what I did:

Ingredients:

3 tbsp Mayonnaise (japanese kind)
2 tbsp Chilli Sauce (the sweet kind that you find in KFC, or you can substitute with chilli powder)
1/2 cup Cream
1 portion of Spaghetti (or whatever pasta)
Canned corn
Tuna flakes
OR substitute corn and tuna with ebiko
Seaweed
(you can put as much corn, tuna or ebiko as you like)

Bring water to boil and then add pasta to boiling water.

Mix mayonnaise with chilli sauce.
Add cream to mixture and mix well.
Season with pinch of salt and sugar.
Heat cream sauce over low fire in pan.
Add ingredients (either corn, tuna or ebiko) and warm up sauce (make sure your sauce doesn't separate or burn)
Add cooked pasta to sauce and toss well.
Serve topped with shredded seaweed.

The corn and tuna version was not bad, more texture to it since there's actually stuff to bite. The sauce was quite a good recreation of the original :) I think topping the dish with fresh salmon sashimi would also be quite nice with the ebiko version. Need to find ebiko so I can actually make that!
