I have some enlargements which look fantastic and have had matting cut but when I put them in they don't look smooth and flat. I have been taping them to the mounting but the photos look like they are bent when the light catches the photos

first use acid free archival tape or photo corners to mount your photographs. I mount mostly fiber paper which absorbs moisture so I tend to leave one side untapped. This may work for you. Just make sure your photo is smooth by using your hand and you should be fine.
