Deep fry, that way you don't have to skin it the hair will just burn off and leave you with a crispy outer skin. Yum.

The mention of this little beastie having rabies is not really a reason for not using it, but there are other considerations. First of all is taste. When an animal as small as a squirrel is hit by a car, the intestines generally rupture and taint the meat, giving it an really bad taste. Next we look at the fact that the time of death is unknown and meat starts to spoil from the moment of death. Now mammals are not as bad as crabs, because if a crab dies before being cooked it's flesh becomes poison very quickly and it takes a while longer for squirrel meat to get to that point, but even then, it is best to use meat only from animals you know have been processed at the time of death. What I am saying is leave the road kill for the animal scavengers whose systems are not as tender as the human and get your squirrels fresh from the tree. A 22 does nicely for that.

Not much meat on a squirrel- so it would make a better stew-make a slit down the middle and gut it - remove the paws, head, tail- then skin it- put in boiling pot of water- and cook until meat falls off the bones- add salt and pepper to taste- add your favorite vegetables - season to taste- you might want to try it fried- it has a lot more flavor that way - even if it is a bit tough-Maybe for a potroast you might want to try a big racoon or a possum-D

Squirrel Stew
Ingredients:
1 squirrel, quartered
1 cup diced onion
2 large tomatoes (from your garden) or 1 can of tomatoes
Assorted fresh ,or canned veggies
Preparation:
Sprinkle seasoned salt, pepper, and cayenne pepper (optional) liberally on the meat. Pour some cooking oil into a large pot (dutch oven). Sauté the meat with the onions until well browned. Drain the excess oil, add about 2 cups water, and bring to a boil. Cut up the tomatoes and add. If you use canned tomatoes add them now. Turn down the heat, and let slow cook for at least an hour. Important: older squirrels may require cooking longer than an hour. Check periodically for tenderness. If you don't you will have a hard time chewing the meat. After the meat is tender, add the veggies, carrots, potatoes, banana pepper, what ever you like. Cook until the veggies are done. An option you can use is, cook up your favorite pasta and serve over the pasta. (eliminate the potatoes). That's it, nice and simple

now that you have it boiling, all the other recipies I have a moot. Don't boil it too long you have mush and mushy squirrel tastes like wet squishy cardboard.
Once the meat comes loose from the bones (it doesnt take long!) debone it. Then take bisquisk and make dumplings. add to the pot of boiling squirrel broth. Add the meat back in, Boil till the dumplings are done. When done add a liberal amount of 7-up and cleaning fluid. That way when you eat it , it not only hits the spot but removes it.
Save the bones for various craft and household needs like home made tooth picks and sewing needles.

dip the little sucker in either boiling water or toss it in the fire for a couple seconds. this removes the fur. next, roll over it with a rolling pin, starting at the head. easiest way to gut any little critter!! also makes it easier to chew the small bones. toss it in a kettle of hot water with half corn cobs, cellery, carrot chunks, and my favorite veggy, the jerusalem artichoke. season it with some pine nuts, marjorum, rosemary, basil, red pepper flakes, and coarse sea salt. make sure to cook the whole mess until it's a pasty consistancy, and serve it on a deep bowl over grilled bread, garnish with goat cheese.

unless you either shot it yourself or caught it in a trap get rid of it. Unless of course you want to get sick, then by all means go for it. Make some hamburgers or better yet have it as your holiday meal for xmas dinner.

I must say you are one cruel guy, althought the poor beast is dead, you should still respect it because it is afterall a living thing once. I suggest you bury it in your backyard or something instead of cooking it.
