You've received some humorous answers :) and as implied in some answers you've already gotten, the belief that all blacks eat chitterlings is a stereotype.
I'm african american (black) and people of color eat the same type of breakfasts you all enjoy.
If you like chitterlings for breakfast by all means serve them, but it's unusual to have them for breakfast or lunch. First you may want to find out if your guests of color ever developed a taste for the dish. Not all, in fact most african american people in my community do not eat chitterlings, but for the few (white and blacks alike) that like them, it's considered a delicacy that rarely eaten.

I wish I knew what chitterlings were, but if you enjoy a dish and it's a favorite, share it with friends, along with some traditional dishes to make them more comfortable

Definately, You should also talk like your from 1950's Alabama. Maybe even make them eat out back, just tell them that after breakfast your gonna have them pick some cotton. Tell racist jokes after you say grace. They will love it. They think that stuffs funny. And don't forget to refer to the males as "boy". It will be the best christmas breakfast ever.
