What is the keyboard command for 'Merge and Center' in Excel?

I am not aware of a built in shortcut for that. You can easily create a macro if you want.

1) In a blank workbook, highlight any three cells from left to right.
2) Click Tools / Macro / Record New Macro
3) Name the Macro "Merge"
4) Click In the Shortcut box, and Hold down Shift and press M ("M" for merge). Excel will respond with Control Shift M - that will be your shortcut key.
5) Change "Store Macro in" to "Personal Macro Workbook" - this way the shortcut will be available to all files - just as your normal shortcuts.
6) Click OK
7) Click in the menu on FORMAT / CELLS / ALIGNMENT
8) Change "Text alignment" horizontal to CENTER and select the "merge cells" box further down.
9) Click the Stop recording button OR click Tools Macro Stop Recording.

from now on, in any Excel file, Control Shift M (or whatever you prefer) will Merge and Center the text across the highlighted cells.
