Aside from the oil? Girl, the oil IS the problem. Saturating your otherwise healthy potatoes in oil increases your fat calories exponentially! Bake your potatoes or mash them. You'll thank yourself later.

Yes, I agree that the oil is the major factor in why french fries have so many calories but my theory is a bit different.
The great taste, the crunchiness, the saltiness also contribute to the caloric intake because no one can just eat one "fry". Right? If you could just eat one fry, the caloric intake would not be very much...but it's almost impossible not to french a batch of fries. French fries can be part of a healthy diet if you could control your diet and intake.
Potatoes can be healthy but most people tend to "fatten" it up. For example, mash potatoes can be a healthy food but we tend to put cream, butter, salt, etc to make it tastier and therefore, the high calories.

Actually most vege consist of fiber, vitamin and mineral. Potata is actually the food store of the plant. As such it is rich in starch a type of polysarchide. Which is converted to glucose by our body. Glucose are high in calori two though less than fat. Our body can also change the glicose from the potato to fats for storage

I have to agree with Star, although the oil doesn't help, the carbs in french fries (or potatoes) in general are very high.

there are 4 calories in a gram of protein and carbs and 9 calories in a gram of fat- those potatoes just soak up that oil= that is where most of the calories are- try some baked fries w tasty seasoning-D

Its all because of the oil thats all. Potatoes don't have that many calories. I just can't believe this whole no carb thing its crazy. A long time ago i lost 35 pounds while eating carbs.

Potatoes technically don't fall into the "vegetable" group. They are starches and are better categorized in the "bread and cereal" group.
Potatoes are high glycemic, which means that they affect your blood sugar kind of like sugar or white flour would since they are high in simple carbohydrates and low in fiber.
"Normal" veggies are high in complex carbohydrates (they digest more slowly, and are also higher in fiber. This causes a slower blood sugar reaction and also means fewer calories.

I know everyone has said oil.
Everyone has said the carbs from the potatoes.
But I'd also like to add that lots of fries are like soaked in sugar or something like that...That might also add to the calories..maybe?

You really can't count the starches as good veggies, plus there is more oil than anything else on a french fry.

oil that they fry the fries in comes from concentrated veggie sources, and if its , say corn oil, thats the oil from a bushel of corn in your one order of fries. so you see in its natural source, you dont get much at all.
