Any recipes? I am thinking to confit the legs and sear the breast but I am kind of at a loss for ideas after that. Any personal favorites?

i would cut into pieces about 2 to 3 inches in size and dust with flour and fry in a pan with butter until brown... then remove the pheasant and add 1 cup of red wine 1 to 11/2 cups of orange juice 1/2 cup of brown sugar and 1 small can of mandrin segments to the pan and then add the pheasant and and cover and bake in an oven for 45 min to 1 hr or until tendercovered..... then remove and take the phesant out of the pan and reduce the sauce and add 1/2 stick of butter then serve with the sauce over the phesant and i like to serve with just plain white rice......

Do a pheasant En croute
make a basic brioche dough and set aside.
Take you breast and wrap with panchetta, and fresh rosemary roll out the dough and place the breast in the center of the dough. Remember the bottom will be the top when done. After having seared the breast and seasoned it, wrap it with the panchetta with the rosemary under the bacon. Wrap in the dough and seal, Bake for about 45 minutes checking after 20, until the dough is golden. (brush with egg wash first) When done cool just a few minutes and slice the top off making like a lid, serve it with the top cantered across the top. I would make a stock with the carcass and then a nice sauce from there.
