I used to have a great recipe that was easy and delicious but I can't find it.

I searched it in allrecipes... there are two recipes for it in the link provided below!

one of them is easy.....

INGREDIENTS
2 cups butter, softened
4 cups peanut butter
2 pounds confectioners' sugar
1/2 cup graham cracker crumbs
1 1/2 cups semisweet chocolate chips
DIRECTIONS
Mix together margarine, peanut butter, confectioners' sugar and graham cracker crumbs by hand. Form into 2 inch balls and place on wax paper.
Refrigerate for 8 hours or overnight.
Melt chocolate chips in top of double boiler. Put a toothpick in the peanut butter balls and dip in chocolate until 3/4 covered. Place on waxed paper to cool.

This is the second recipe....
INGREDIENTS
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
2 1/2 cups semisweet chocolate chips
2 tablespoons shortening
4 cups confectioners' sugar
DIRECTIONS
You'll need wax paper, a double boiler, a cookie pan, and a medium bowl. In the medium size bowl, mix peanut butter, butter, vanilla, and confectioners' sugar (mixture will be stiff).
Shape into balls and place on a pan covered with wax paper. Place into the refrigerator.
In double boiler, melt chocolate and shortening. Pour into bowl and dip balls with chocolate. Refrigerate for thirty minutes until chocolate is firm.

The recipe I have is easier than all the previous listed. I just made my third batch of the season tonight. My son helps me.
1 1/2 cups of peanut butter creamy
6 cups powdered sugar
2 sticks of BUTTER softened
1 1/2 tsp vanilla
1 1/2 bags of choc chips melted in a double boiler (I use a pyrex bowl over a small pan of water on low heat)(don't let get grainy)

mix the first four ingredients well. It will look coarse. Roll into one inch balls. freeze on a cookie sheet until firm. Melt your chocolate. Dip balls about 2/3 in chocolate and place back on cookie sheet. Use foil or wax paper or parchment for lining.

I think these are easiest with the least but best ingredients. This is a good Buckeye recipe.

AMISH BUCKEYE COOKIES

1/2 lb. butter

12 oz. chocolate chips

Thoroughly mix butter, sugar, vanilla and peanut butter. Roll into small balls. Melt chocolate in double boiler. Keep on low heat while dipping balls-use toothpicks for dipping. Leave a small space open at top to give appearance of a buckeye. Put on waxed paper to dry.

I have what everyone who has tried them says is the BEST buckeye recipe. It is a bit of work but great results if you follow the recipe. 1 lb Land O Lakes unsalted butter ( 4 sticks, 2 cups ) 1 lb Jif creamy peanut butter ( 2 cups ) 2 lb Domino confectioners sugar Nestle Toll House Semi Sweet Chocolate Chips 1. soften butter by leaving out until it is cool but soft. 2. mix softened butter with peanut butter 3. mix in sugar about a cup at a time until well blended and no butter lumps. 4. put in Freezer at least 2 hours. 5. roll mix into balls, place on wax paper on cookie sheets and chill in freezer 6. once they are solid put tooth pick in center of ball & dip in the melted chocolate chips then place back on wax paper & chill again. This makes over 200 candies. They have to be kept in the refrigerator or freezer since they have whole butter. trust me they are melt in your mouth yummy!

~1 cup chunky peanut butter
~1 cup soft margarine
Mix all ingredients together, shape into irregular shaped balls and refrigerate until thoroughly chilled, overnight is best.

In top of a double boiler, melt 6 ounces of chocolate chips & 1/2 cake of paraffin.

Turn off heat, but leave mixture over hot water. Use toothpicks to dip balls into chocolate.

Place on wax paper and refrigerate until cool.

Buckeye Cookies
Ingredients:
2 c. creamy peanut butter (not all natural)
1/4 c. butter or margarine, softened
3 3/4 c. powdered sugar
2 c. semi-sweet chocolate
2 Tbsp. Shortening

Directions:
Line baking sheet with wax paper. Beat peanut butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1” balls; place on baking sheet. Freeze 1 hr. Melt chocolate and shortening in medium, uncovered, microwave safe bowl on high power for 1 min. Stir. Microwave longer if necessary, stirring until melted. Dip balls in chocolate. Refrigerate until chocolate is set

Buckeye Balls
"Peanut butter balls dipped in chocolate. They look like buckeye nuts. Absolutely delicious!"
INGREDIENTS
1/2 cup butter, melted

1 tablespoon shortening
DIRECTIONS
Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!
