Make cheese cake cups!!! YUMMY!!! and cute too LOL
INGREDIENTS
16 vanilla wafer cookies
2 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake papers.
Place one wafer cookie in the bottom of each cupcake paper. In a medium bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until smooth. Pour over wafers in cupcake papers.
Bake in preheated oven 15 minutes, until golden and set.

Chocolate Cheesecake on a Stick
1 (8-inch) cheesecake
1 (12 oz.) pkg. milk chocolate chips
2 T. vegetable shortening
1/2 C. chopped nuts of your choice or brittle chips
8 Popsicle sticks
Line a baking sheet with wax paper.
Cut cheesecake into 8 equal wedges and make a 1/4-inch horizontal slit in the center back of the crust of each slice of cheesecake with the tip of a knife. Insert a wooden craft stick through the slit, halfway into each slice. Place the slices on the baking sheet, cover, and freeze overnight.
Melt the chocolate chips and shortening over low heat, stirring constantly. Remove from the heat and spoon over the cheesecake slices, coating completely and allowing the excess chocolate to drip back into the saucepan.
Before the chocolate hardens, sprinkle 1 tablespoon nuts over the top of each and return to the baking sheet; freeze for 1 hour, or until the chocolate and cheesecake are frozen.

Use a recipe that has 4 8 oz pkg of cream cheese per 9 inch cheesecake and a cup of good quality sour cream. Use fresh eggs and good vanilla. And line your springform pan with parchment for easy release from the pan and a beautiful cheesecake. I bake mine for 10 minutes at 425 and then turn it down to 250 for the last 50 minutes. My last one was so perfect, it didn't crack. Email if you would like recipe. I would trade it for best answer.

16 to 20 wafers
1 pack. cream c.
1 pack. cream
3/4 cup sugar
2 yolks
1pack. gelatin not color,not taste
1 tsp vanilla extract
put the wafers on a round form
mix all ingredients and put in the form
let it cool for 4 hours
i love it!

Grated zest of an orange and a lemon make it soooo much better
Also, I make the one with the sugar cookie crust. It takes a lot more time but it is so good.

first make sure all ingrdients are room temperature,that's very imperative. second, use orange and lemon zest, third, if going to use fruit use fresh fruit. make fruit by using honey, sugar, 1/3 cup of water.
