um i would recommend to skip that activity for awhile. you must have cookie cutters to have a perfect gingerbread man shape.

Most rolled cookies (like gingerbread) can be shaped by hand, as well. So if you are into them looking all the same, you can make yourself a pattern and then trace around it with a knife after you roll the door. Or, you can be creative and do something like ginger snowmen - they would be easy to shape with three flattened balls. Another fun thing to do is put the dough through a garlic press and use it for hair or fur. Have you tried Michael's or Hobby Lobby for cookie cutters?

Check out craft stores! Another thing to do is not only look for gingerbread men cookie cutters...look for a holiday cookie cutter pack...they are usually 19.99...but instead of driving all around...Call the stores...and when you find a store with them, ask them to put the cutters on hold for you.

Possible solution 1: Make a template from wax paper (draw freehand or printout from computer, then cut out from wax paper). Put template over rolled out dough. Using a sharp knife, cut dough around the template.
Possible solution 2: make round cookies using the top of a drinking cup, then decorate, making cookie faces. Call them gingerbread heads.

Yes, you can roll out the general form and give the edges a cut look by trimming it with a knife but unless you're an artist at heart, you may have a gingerbread Igor.

I don't think there's any other way to make gingerbread men except to have the cut out. You can always draw one on a cardboard and cut it out, and then cut around it on the doe. Depending on how bad you want them, it could take awhile but will do the trick.
