I just got engaged and I have a job so I won't be able to make meals that need to cook for 3 hours so I need some quick yummy recipes for me and my husband to have when we get home from work.

Stir Fried Vegetables and Chicken

1 whole chicken breast, skinned and boned
1 lb fresh broccoli, cleaned and trimmed
2 T vegetable oil or olive oil
1 med. Onion chunked
2 med. Sized red or green peppers chunked
½ lb fresh mushrooms quartered
¼ t red pepper
⅓ cup Kikkoman stir-fry sauce

Cut chicken into 1-inch squares. Cut broccoli into bite-size pieces. Peel stalks and cute into ¼ “ thick slices. Heat oil in hot wok or large skillet. Add onion and broccoli, stir-fry 1 min. Add 2 T water, cover and cook 2 min, stirring once. Add bell peppers and mushrooms, stir-fry 2 min. Stir in stir-fry sauce and red pepper. Cook and stir until chicken and vegetables are coated with sauce. Serve immediately. For four. Cauliflower, celery and carrots may also be used. Accompany with rice.

Chicken and Rice Casserole

1 whole broiler boiled and deboned, save broth
1 cup uncooked rice
1 cup ea. chopped onion, celery and green pepper
1 6oz. can drained water chestnuts
1 4oz. can mushrooms
½ cup butter
1 t salt (for rice)
salt and pepper to taste
8oz. mild cheddar cheese

Cook rice in 2¼ cups of chicken broth with 1 tsp. salt for 15 min. In sauce pan, sauté in butter the onion, celery and green pepper. Add sliced mushrooms and chestnuts. Cook 2 more minutes. Mix with rice and deboned chicken. Add ½ - 1 cup of chicken broth salt and pepper and ½ of cheese. Put in buttered casserole. Top with remaining cheese. Bake at 350° for 30 min.

Meatballs with Orzo
This recipe is a combination of several old family favorites. Orzo is a rice shaped pasta that cooks nicely with the other ingredients so this is a one pot meal.
INGREDIENTS:
1 onion, chopped
1 Tbsp. olive oil
14 oz. can ready to serve beef broth
1 cup uncooked orzo pasta
1 lb. frozen cooked meatballs
14 oz. can Italian flavored diced tomatoes, undrained
4 plum tomatoes, chopped
1 cup freshly grated Parmesan cheese
PREPARATION:
In large skillet, cook onion in olive oil under tender. Add beef broth and bring to a boil. Stir in orzo, meatballs and tomatoes, stir. Return to boil. Cover and reduce heat to medium-low. Simmer 7-8 minutes until liquid is reduced, stirring occasionally.

Add plum tomatoes and cook 5-8 minutes until orzo is tender, stirring frequently. Sprinkle with cheese and serve. Serves 4-6

PS> being engaged and having a job doesn't mean you can't make good meals. More importantly, I recommend that you get him accustomed to helping out in the kitchen from this moment forward. You'll get faster with practice and experience, but the best thing you can do is have him help out from the very beginning. You're not going to be making 3 hour meals every night. And if he helps, you'll be done twice as fast! Good luck!

If I am able on weekends I will try to prep for meals in the week. That usually consists of grilling up a couple of peices of chicken on the foreman then cutting and freezing them in small freezer baggies. Then the night before I take one out and put it in the fridge, saves a considerable amount of time during the week.

Honey Balsamic Recipe

2 tablespoons of honey
1 tablespoon of Balsamic vinegar
1 teaspoon of oil
juice of half a lemon
1 clove of garlic (minced)
½ teaspoon salt

In a bowl mix all these ingredients together and add your chicken- Marinate the full breasts or cubes (if you decide to cut them) for at least an hour- preferably longer-
Cook them in a skillet with the remainder of the marinade- it will create a thick tasty sauce to accompany your chicken

Buy a wok.

You can cook rice in the microwave, takes about 20 - 30 mins. While that is cooking chop some veggies and meat. Throw them in the wok and stir fry. Throw a bottled sauce into the wok, stir and you have rice and whatever.

Vary it by putting some veggies in with the rice. Potatoes will cook in the microwave in about the same time as the rice and you can mash them with herbs, onion, garlic, bacon bits or whatever you fancy.

You can also cook omelets in a wok. In fact, in 10 mins you can cook anything in a wok. I love my wok!

I know this is not what you asked, but why not get a pressure cooker and make some yummy cassroles, you can put all the ingredients in the pot before you go to work and when you get home it will be cooked, ready to eat. and if you have left overs you can freeze them so all you have to do is take it out of the freezer and heat it up.
you can make casserols, ribs. lamb shanks, vegtables, you can cook almost anything.

Tator Tot Casserole:
Press a pound of super lean ground beef into the bottom of a 9x13 pan(you can add chopped onions to the meat if you like) Spread two cans of cream of chicken soup over meat. Cover soup with tator tots. Bake at 400 for about 45 mins. Serve with green beans or broccoli. Yum

get a crock pot and you can have dinner cooked by the time you get home
i have one of the big crock pots and i cook roasts,potatoes,carrots and whole chickens and veggies
you just put the food in before you go to work and add the water
and when you get home it`s done .i even make bean soup in mine..it`s great to come home and smell dinner already cooking
and ready to eat...
