How did the convention develop
as to which countries are considered oriental?

Oriental is from the Latin word for rise, as in the sun. Since the sun rose in the east, countries east of the Roman empire were considered to be a part of the Orient. At first it was just the Middle East area, but as they traveled even farther east and discovered China, it extended to everything in that direction. Technically the term applies to all countries from the Middle East to Korea and Japan, but I have mostly heard it applied to the Asian countries east of India.
