I'm looking for some new casserole recipes, I'm getting tired of making the same things.

Barbecue Chicken Casserole

INGREDIENTS

* 1 cup all-purpose flour
* 1 broiler/fryer chicken (3 to 4 pounds), cut up
* 2 tablespoons vegetable oil
* 1 cup chopped onion
* 1 cup chopped green pepper
* 1 cup thinly sliced celery
* 1 cup ketchup
* 1/2 cup water
* 3 tablespoons brown sugar
* 3 tablespoons Worcestershire sauce
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1 (16 ounce) package frozen corn, thawed

DIRECTIONS

1. Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown the chicken in oil; transfer to an ungreased 13-in. x 9-in. x 2-in. baking dish.
2. Drain skillet, reserving 2 tablespoons drippings. In the drippings, saute onion, green pepper and celery until tender. In a bowl, combine the ketchup, water, brown sugar, Worcestershire sauce, salt and pepper; add to vegetables. Bring to a boil. Pour over the chicken.
3. Cover and bake at 350 degrees F for 30 minutes. Sprinkle with corn. Bake 18-20 minutes longer or until chicken juices run clear and corn is tender.



Cheesy Nacho Casserole
INGREDIENTS

* 1 cup cubed cooked chicken
* 3/4 cup crushed nacho cheese-flavored tortilla chips
* 2/3 cup condensed cream of chicken soup, undiluted
* 1/2 cup sliced fresh mushrooms
* 1/4 cup sour cream
* 2 tablespoons 2% milk
* 1 tablespoon chopped green chilies
* 1/2 teaspoon finely chopped jalapeno pepper (optional)
* 1/4 cup shredded part-skim mozzarella cheese
* 1/4 cup shredded Cheddar cheese

DIRECTIONS

1. In a bowl, combine the first eight ingredients. Combine the cheeses; stir half into the chicken mixture.
2. Transfer to a 1-qt. baking dish coated with nonstick cooking spray. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees F for 25-30 minutes or until cheese is bubbly.

Company Potatoes
NGREDIENTS

* 1 (2 pound) package frozen hash brown potatoes, thawed
* 1 (10.75 ounce) can condensed cream of potato soup
* 1 (10.75 ounce) can condensed cream of celery soup
* 1 (16 ounce) container sour cream
* 1/4 cup milk
* 1/2 cup chopped onion
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1/8 teaspoon dried dill weed
* 2 cups finely shredded Cheddar cheese
* 2 pinches paprika

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. Combine the potatoes, potato soup, celery soup, sour cream, milk, onion, salt, pepper and dill weed. Stir until well mixed; pour into prepared baking dish.
3. Spread cheese evenly over potatoes, sprinkle with paprika and bake for 1-1/2 hours until browned on top and bubbly.

Wild Rice and Turkey Casserole

Yield: 6 to 8 servings

An extravagant combination of wild rice, mushrooms, turkey, and almonds. A very special way to use holiday leftovers.

•1 cup wild rice
•1/4 cup (1/2 stick) butter
•16 ounces mushrooms, sliced
•1/2 cup chopped onion
•1-1/4 cups heavy cream
•3 cups diced cooked turkey
•1/2 cup blanched sliced almonds
•3 cups chicken broth
•salt and pepper to taste

Wash the rice thoroughly. Place in a large saucepan and cover with water. Bring to a boil, then remove from the heat and set aside for 1 hour. Drain.

Preheat the oven to 350 degrees F. Grease a 2-quart casserole dish.

In a large skillet, melt the butter. Add the mushrooms and onion and saute until browned, about 8 minutes. Add to the rice, along with the remaining ingredients, and mix well. Spoon into the casserole and bake for about 1 hour, until the rice is tender.

Cheese Chicken & Broccoli Recipe:

What you need:

•Two boxes frozen broccoli
(thaw or cook in microwave)
•Three large or four medium boneless, skinless Chicken breasts
•One can cream of chicken soup
•One can cream of celery soup
•Â¾ cup milk
•Three slices Velveeta Cheese

What you do:

1.Preheat oven to 350 degrees
2.Cut chicken breasts into halves or thirds
3.Brown each side of chicken
4.Line the casserole dish with broccoli
5.Place chicken pieces on top
6.Combine both soups, milk, and cheese over warm stove
7.Pour soup mixture over casserole
8.Bake in 350° oven for 50 min – 1 hour

"Chicken Breasts Florentine" - Serves 6

1 pkg. wide egg noodles
2 tbsp. all-purpose flour
1/4 cup milk
1 cup chicken broth
2 tbsp. grated Parmesan cheese
Freshly ground salt and pepper, to taste
Freshly ground nutmeg
2 (10 oz.) pkgs. frozen spinach; thawed, drained and squeezed
1 1/2 lbs. boneless, skinless chicken breasts; cut into strips

Preheat oven to 350*. Bring a large pot of water to a boil; cook noodles according to package directions.
Place milk and flour in covered container; shake until smooth. Mix flour mixture in saucepan with chicken broth; bring to boil, stirring constantly, until thickened. Remove from heat; stir in Parmesan, salt, pepper and nutmeg.
Mix spinach with half of the sauce; spread in 13x9" baking pan that has been sprayed with nonstick cooking spray. Arrange chicken over spinach; pour remainder of sauce over chicken. Sprinkle with a bit of additional nutmeg. Bake, uncovered, for 20-25 minutes, or until chicken is cooked through. Serve chicken/spinach over pasta.


"Old-Fashioned Chicken Potpie" - 6 to 8 servings

1 1/2 cups sliced fresh mushrooms
1 cup sliced fresh carrots
1/2 cup chopped onion
1/3 cup butter
1/3 cup all-purpose flour
1 1/2 cups chicken broth
1 1/2 cups milk
4 cups cubed cooked chicken breast
1 cup frozen peas
1 (2 oz.) jar diced pimentos; drained
1 tsp. salt
BISCUIT TOPPING:
2 cups all-purpose flour
4 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 cup cold butter
2/3 cup milk

In large saucepan, saute mushrooms, carrots and onion in butter until tender; sprinkle with flour. Gradually stir in broth and milk until blended. Bring to boil; cook and stir 2 minutes or until thickened. Add chicken, peas, pimentos and salt; heat through. Pour into greased shallow 2 1/2-quart baking dish; set aside.
In large bowl, combine flour, baking powder, sugar, salt and cream of tartar. Cut in butter until mixture resembles coarse crumbs; stir in milk just until moistened. Turn onto lightly floured surface; knead 8 to 10 times. Pat or roll out to 1/2" thickness; cut with a floured 2 1/2" biscuit cutter.
Place biscuits over chicken mixture. Bake, uncovered, at 400* for 15-20 minutes or until biscuits are golden brown.
