That depends if you're coming home or arriving in a different country.
When you return they usually asked what was the reason for your visit, how long where you gone, have you got anything to declare, any alcohol, any tobacco products, any food, seeds etc.
Most of the time you have to write out a form in the airplane, then they ask you the questions and look at your form and your passport and ticket and then they decide whether you have to go and open your bags.
