One of my favourites and easy to make is chicken risotto.
Just cook your rice in some vegetable stock, add some peas, carrot and corn to it then tear up roast chicken into little pieces and add to the rest.
You can eat it hot or cold.

This is super easy and you can do the majority of it the day before. I don't know how many people you are going to be serving sooo. Cut some sweet potatoes in large chuncks and boil until tender. Drain and peel off the skin (it will come off much easier after they are cooked) or you can microwave or bake the whole potatoes. Mash the sweet potatoes with a little butter, brown sugar, cinnamon, and salt. Milk if you want but really use hardley any. Then cool to room temp or refridgerate. If you are refridgerating the mashed taters then warm them slightly before continuing. Toast some shredded cocnut on a baking sheet by placing it in a 350 degree oven for about 5-10 min, or until golden brown. Pat the mashed sweet potatoes around large marshemellows, then roll in the toasted cocnut. Place in a lightly greased baking sheet and bake just before ready to serve at 350 for about 10-15 minutes. I did this for thanksgiving and with 2 large sweet potatoes I made 6 or 7 "balls" each person only ate like 1 ball some people ate 2...

Try to make hot potato salad all you need is 1 5 lb bag of red potatos 3 pounds bacon 4 cups cheddar cheese and 1 bottle of ranch dressing BOil the potatos and cut then into squares fry the bacon and crumble it us then just mix everything together in a crock pot and let it heat for 3-4 hours . It great and is a big hit at all my get togethers

If you have a crockpot buy some frozen (pre-cooked) little meatballs. Put them in the crockpot, add a bottle of whatever your favorite BBQ sauce is (I use KC Masterpiece) and about a cup of brown sugar. The BBQ sauce mixed with the brown sugar give the meatballs a sweet yet tangy glaze, and you can let them sit in the crockpot on low heat all day...although they won't last that long.
If you have a couple of hours before serving you can put the meatballs into the crockpot while still frozen on medium heat and they will heat up in time to serve. Otherwise thaw them first.
Be sure to stir them every once in awhile, especially when you first put them in there, to make sure they are covered in enough sauce.

Brownies. Make them without the nuts. People always like brownies. If you need a food. Cheese cubed. Buy 3 one pound blocks of cheese and cut them into 1/2 by 1/2 squares. Get a box of tooth picks. Popular cheeses are chatter, pepper jack, and American.

everyone usually loves a potato or macaroni salad which is usually served in the spring or summer. I mention it because I wish people would see it as a year round dish and not seasonal. It's always a hit though.

How about a vegetable tray with a dip? I use cherry tomatoes, pickles, black and green olives, sliced cucumber with or without the peel, cauliflower, and carrots. You can use whatever vegetables you prefer. It's always a hit. I also use Hidden Valley Ranch dressing that you make your ownself.
