Pillsbury cookie dough is still the best as far as i'm concerned. They even come up with special holiday cookies that you slice and end up with christmas tree cookies, or snowmen or something.

These are my favorite:
Thumbprint Cookies
1/2 cup light brown sugar, firmly packed
1/2 cup margarine, room temperature
1/2 cup shortening
2 large eggs, separated for yolks
1 teaspoon vanilla
2 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
jam or preserves (seedless is best)
PREPARATION:
Cream together brown sugar, margarine, and shortening; beat in egg yolks and vanilla. Stir in flour, baking soda, and salt. Shape dough into 1-inch balls. Place cookies about 1 inch apart on ungreased baking sheet; press thumb deeply in center of each. Fill thumbprints with jam or preserves.
Bake until light brown, about 10 minutes. Immediately remove from cookie sheet; cool thoroughly.
Makes 5 to 6 dozen cookies.

Mocha Meringue Kisses
Ingredients
1/3 cup sifted powdered sugar
2 tablespoons unsweetened cocoa powder
1 tablespoon cornstarch
1 teaspoon instant espresso coffee powder
3 egg whites
1/2 teaspoon vanilla
1/4 cup granulated sugar
1/3 cup semisweet chocolate pieces
1 teaspoon shortening
Directions
1. Line a cookie sheet with parchment paper or foil; set aside. In a small bowl stir together powdered sugar, cocoa powder, cornstarch, and espresso powder; set aside.
2. In a medium bowl beat egg whites and vanilla with an electric mixer on high speed until foamy. Gradually add the granulated sugar, 1 tablespoon at a time, beating until stiff peaks form (tips stand straight). Gradually fold in the cocoa mixture.
3. Transfer the mixture to a pastry bag. Pipe twenty-four 2-inch ?kisses? onto the prepared cookie sheet. (Or drop mixture by rounded teaspoons onto the prepared cookie sheet.) Bake in a 250? oven for 1 hour. Cool on the cookie sheet. Remove from parchment paper.
4. In a small saucepan combine chocolate and shortening. Cook and stir over low heat until chocolate is melted. Drizzle the melted chocolate over cookies. Makes 24 cokies.

Chocolate Thumbprints
For the cookies:
1 cup butter, softened
1 cup sugar
1 tsp. vanilla
1/4 tsp. salt
2 oz.(2 squares) unsweetened chocolate, melted, cooled
1 egg
2 1/2 cups flour
For the filling:
1/4 cup butter, softened
2 cups powdered sugar
1-2 tbsp. milk
1/2 tsp. vanilla
few drops red or green food coloring
1/4 cup crushed peppermint candy
In a large bowl, combine 1 cup butter and sugar; beat till creamy. Add 1 tsp. vanilla, salt, chocolate, and egg; mix well. Lightly spoon flour into measuring cup; level off. Stir flour into creamed mixture; mix well. Chill 30 minutes for easier handling. Heat oven to 375 degrees. Shape dough into 1-inch balls;place 2 -inches apart on ungreased cookies sheets. With thumb, make imprint in center of each cookie. Bake 8-10 minutes or until edges are set. Immediately remove from cookie sheets; cool.
Combine all filling ingredients except peppermint candy; mix well. Fill each cookie with about 1/2 tsp. filling mixture. Sprinkle with candy. Makes 6 dozen.
****Tip: To make deeper imprint in cookie, press again immediately after removal from oven.

i use this recipe every year and they keep coming back for more the cookies stay nice and chewy.
2 cups flour
3/4 cup hershey cocoa or any cocoa
1 teas baking soda
1/2 teas salt
1-1/4 cup butter i use crisco butter flavor
2 cups sugar
2 eggs
2 teas vanilla extract
any chips you want to use
heat oven 350 degrees stir flour,salt and baking soda in med bowl. beat butter or crisco and sugar then add eggs ans vanilla, then slowly add flour mix when creamed add chips.

CHOCOLATE-CHERRY COOKIES - Festive!
Readers and food editors alike rate this 1981 cookie among their all-time favorites. Be sure to use real, not imitation, chocolate pieces for the frosting that bakes in place.
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup butter, softened
1 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1 egg
1 1/2 teaspoons vanilla
48 maraschino cherries (about one 10-ounce jar), undrained
1 cup semisweet chocolate pieces
1/2 cup sweetened condensed milk
Preheat oven to 350 degrees. In a bowl combine flour and cocoa powder. Set aside. In a large mixing bowl beat butter with electric mixer on medium to high speed for 30 seconds. Beat in sugar, baking soda, baking powder, and 1/4 teaspoon salt. Beat in egg and vanilla. Gradually beat in flour mixture.
Shape dough into 1-inch balls. Place balls about 2 inches apart on an ungreased cookie sheet. Press down center of each ball with your thumb. Drain cherries, reserving juice. Halve any large cherries. Place a cherry or cherry half in the center of each cookie.
For frosting, in a small saucepan combine chocolate pieces and the sweetened condensed milk. Heat until chocolate melts. Stir in 4 teaspoons of the reserved cherry juice.
Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. (If necessary, thin frosting with additional cherry juice). Bake in preheated oven about 10 minutes or until edges are firm. Cool on cookie sheet for 1 minutes. Transfer to wire racks, cool. Makes 48.
To store: Place in layers separated by waxed paper in an airtight container, cover. Store at room temperature for up to 3 days or freeze for up to 3 months.

take a box of white cake mix, any brand, add 1/3 cup soft butter, 1/3 cup of vegetable shortening, and i egg. mix, add the new nestles red and green candy swirl chips. fantastic and easy to make. bake at 350 for 10-12 mins. good luck and enjoy.
