When ever I have a child to buy for I try to think outside the norm.
Something that they will enjoy,for a long time.
Here are a few suggestions=

Go to Walmart or RadioShack or a similar store. Look in the educational toy section and you'll find balls that have letters on them and sound out the letter as you punch it, books that count with the child as he turns the page, characters that sing along and dance. You can find toys that light up and play music when a certain shape is inserted into it. Whatever you get, make sure you put it in a big box and wrap it up for him because when the wrapping paper is gone and he gets tired of the noise, he'll love crawling into and out of the big box. It'll be his favorite toy of all for sure.
hmmm.. k.. other than toys... you could get him a bath robe and character pj's. There are outfits like superman dressup clothes. Babies like to hear themselves, so you could get a microphone and show him how to make noises in it. You could get a little pup tent for him to play in. He would like the thick baby books that are impossible to tear or cloth books. Still... whatever you get, be sure to put it in a big box cause, like I said, the box will be his fav.

I have a nephew that just turned one in October, for Christmas this year, he is getting a wagon, boy have the wagons changed since I was a kid, this one has flip down seats, cup holders and seat belts, it is by Radio Flyer. And he is spoiled so he is also getting a child sized card table with colorful chairs, I know I spoil him! Good Luck! Other ideas are Toy Box, Fisher Price has a ride along Zebra I believe, he is getting that from mommy and daddy.

There are a lot of good toys out there for 12 months +...maybe something that teaches the alphabet in a fun way like that catepillar by Leap Frog?

One year olds LOVE simple things....
I know you said no toys but simple $5 toys are a big hit. Something that makes noise, shakes or is chewy.
Going with a no-toy theme, you could get him:
a savings bond
Fun bath soaps (foam soaps, crayon soaps)
Baby Einstein DVD's

Take him to the park for the afternoon and play and spend time with him. At that age they really don't remember the toys they received.
You are better off giving him love, he will appreciate for a lot longer.

One year olds don't really need expensive gifts. They are happy with boxes and wrapping paper.
Perhaps a touch and feel book, which are always popular with babies. Or a set of building blocks. Or one of those push car/wagon type of toys where he can sit or push, depending on how he feels.

Get him some bubble bath or something like that. My mom always gave us bath crayons, bubble bath, or other usable items because we were spoiled rotten. Now I get exotic teas to try out, and my brother usually gets some good work jeans, because he always rips through those. Also, if he is just one, I'm sure that he'll need more clothes soon!

don't get him anything with guns or anything that has to do with fighting at all. people form personalities at the ages 1 and 2 so if you teach him violence and stuff like that he will grow up like that. I know this sounds kind of funny but Barney is a good thing.
