Both of my children LOVE Chicken Nugget Casserole. The recipe calls for frozen chicken nuggets, but this is how I make it...

Cut 3 large chicken breasts into one-inch cubes and saute in a skillet sprayed with nonstick cooking spray until the chicken is cooked through. Then, place the chicken in a casserole pan. Cover with spaghetti sauce. Sprinkle with Italian seasoning and Parmesan cheese. Finally, top with low-fat mozzarella cheese and place in a 350 degree oven for about 25 minutes or until the cheese is bubbly.

My kids love it when I fix this and my husband admits it's pretty good as well. If you spray the casserole pan with nonstick spray, cleanup's not too bad either. :-)

These answers all look great, but the one thing I don't see is plain old steamed rice. My baby enjoys it. Cut up some chicken and veggies with it. It's a fast easy meal, and you can always add Soy sauce and other spices on your meals. Spaghetti is my son's favorite grown up meal.

Please do not have your child eat mac and cheese, hot dogs and chicken nuggets. Eww.. I always cook a well balanced meal. Tonight we had roast chicken, sweet potatoes and green beans. If you cut up everything into small pieces, they can eat all of it. Have them eat healthy now. Everyone is always amazed at how my kids eat their veggies. My oldest will ask me to make her a salad for lunch. I do make mac and cheese and hot dogs, but it's not the only thing they will eat. Roast pork, roast beef and roast chicken is really easy to make because you just throw it in the oven. Throw the potatoes in there too, just boil frozen veggies and you're done in like 20 minutes. Homemade spaghetti is really good too. We make homemade pizza too and the kids get to help. Make it fun. Good luck!

My children loved Kraft mac and cheese, fish sticks, noodles of any kind were fun for them,chicken and dumplings, steamed veggies with ranch dressing to dip in and omlets were also a big hit. Good luck...

Offer the child whatever you're eating. You don't need a special menu at this age.
