I'm cooking a roast tonight but I don't know when to put the vegetables in to roast with the meat? Does anyone know? Do I put the vegetables in with the meat at the same time or wait? And do I add oil?

I usually add the vegetables about half-way through cooking the meat. Don't add any oil, just salt and pepper. Make sure your vegetables are all cut up about the same size.

I always put the veggies in at the same time. I add beef stock, it keeps the vegetables from sticking. Plus it adds flavor. Dont add oil, its not necessary. You can always use water if you dont have beef stock. Go about a quarter way up the roast. Good luck

You can add the vegetables with the roast. Do not add oil. Add enough water so the roast will be moist. Roasts and vegetables are really good in a crock pot also. Good Luck!!

You put the veggies in the same time as the meat. You don't add oil, but you could add a little beef stock if you wanted. (Oil will make a greasy mess in the end because of the fat from the meat)

Roasted Vegetables

This colorful mix of vegetables makes an ideal accompaniment to chicken or fish, or simply toss with some pasta for a vegetarian meal.
INGREDIENTS:
2 tbsp olive oil
2 red onions, cut into thick wedges
2 red potatoes, cut into 6 wedges
2 medium carrots, cut into chunks
2 medium parsnips, cut into large chunks
2 zucchini, thickly sliced
4 garlic cloves
1 red bell pepper, seeded and cut into chunks
Fresh rosemary sprigs
Ground black pepper
PREPARATION:
Preheat oven to 425 degrees. Spray a large baking pan or ovenproof dish with nonstick cooking spray. Arrange cut vegetables in dish and drizzle with olive oil. Add rosemary sprigs and season with pepper.
Roast vegetables for 20 minutes.
