When I was a kid we had a cookbook called the Charlie Brown Cookbook, and made Lucy's Lemon squares whenever mom would let us! I looked for the cookbook as an adult, and could not find it. However, I did finally find the recipe on the internet, and they're as good as I remember:


Sift 1 cup of flour and a 1/2 cup of powdered sugar together into a bowl. Mix 1/2 cup of butter (1 stick) into the flour and sugar with your fingers until well blended. Pat evenly into the bottom of an 8x8 baking pan. Bake for 20 minutes at 350. Meanwhile, beat together 2 eggs, 1 cup of granulated sugar, 1/2 teaspoon of baking powder, 3 tablespoons of fresh lemon juice and a dash of salt. Pour this mixture over the baked crust and return to the over for 20-25 minutes at 350. Cool on a rack. Sprinkle with powdered sugar and cut into squares. (posted 06-01-02)

EVERYTHING COOKIES
1 C. margarine
1 C. brown sugar
1 C. white sugar
3 eggs
1 C. peanut butter
1 C. coconut
1 C. chocolate chips
1 C. flour
1 T. baking soda
1 C. oatmeal
1 C. raisins
1 C. pecans

Preheat oven to 350° F. Beat margarine, both sugars, eggs, and peanut butter until creamy. Add remaining ingredients and mix well. Drop by spoonfuls on cookie sheet and bake for 10 minutes. Makes 9 dozen.

World's Best Cookies

1 c Butter
1 c Sugar
1 c Brown sugar; firmly packed
1 Egg
1 tsp Vanilla extract
1 c Salad oil
1 c regular uncooked rolled oats
1 c crushed cornflakes
1 c Shredded coconut (you can use less)
1 c Walnuts (you can use less)
3 1/2 c All purpose flour
1 tsp baking soda
1 tsp Salt
Preheat the oven to 325 degrees
Cream together the butter and sugars until light and fluffy
Add egg and vanilla and mix well.
Add salad oil and mix well
Add oats, cornflakes, coconut, and nuts and mix well.
Add flour, baking soda, and salt and mix well.
Dough will be slightly sticky.
Form into balls the size of a walnut.
Place on a lightly greased cookie sheet, 1.5 in apart (or use silicone mat)
Flatten balls with a big fork dipped in water
Bake 12 minutes, or until cookies are golden brown.

Candy Cane Cookies

INgredient
1/3 cup shortening
1/3 cup butter(no substitutes)
3/4 cup sugar
1 tsp baking powder
1 egg
2 tbsp milk
1 tsp vanilla
1/3 cup unsweetened cocoa powder
1 3/4 cups allpurpose flour
4 ounces white chocolate
2 to 4 tsp shortening
1/2 to 2/3 cup crushed peppermint candy canes

Directions
Beat 1/3 cup shortening and butter on medium speed 30 seconds. *** sugar and baking poder, then egg, milk, and vanilla. Beat in cocoa powder and as much flour as you can with mixer. Stir in remaining flour. Divide dough in half. Cover; chill at least 1 hour.

Preheat oven to 37degree F. Working with one portion of dough at a time, roll to slightly less than 1/4 inch thickness on lightly floured surface. Using a 4 inch candy cane shape cutter, cut dough. PLace 1 inch apart on ungreased cookie sheet. Bake in preheated oven 7 to 9 minutes or until firm and lightly browned. Remove from cookie sheet; cool on a wire rack.

Heat white chocolate and 2 tsp shortening in a small saucepan over low heat till melted, stirring often. (add more shortening, if necessary, for drizzling consistency.) Drizzle one cookie with chocolate mizture; sprinkle with candy. Preheat with remaining cookies. Let stand till set. Makes about 36 cookies.

Chocolate Macaroon Cookies

INGREDIENTS:
3 egg whites
1/4 teaspoon salt
1 cup sugar
1/2 cup ground almonds
1/2 teaspoon vanilla extract
6 ounces (about 1 cup) semisweet chocolate chips, melted, cooled

PREPARATION:
Beat egg whites and salt until stiff but not dry. Beat in sugar, a little at a time; beat until mixture is thick and glossy. Mixture should STAND IN PEAKS. FOLD in almonds, vanilla, and melted chocolate.

Drop chocolate macaroons by teaspoonfuls onto buttered cookie sheets. Bake chocolate macaroons at 350° for 12 to 15 minutes.
Makes about 48 chocolate macaroons.
