Would you invite me?? How about this?
Mexico : unchange
Russia : unchange (if you are in a cold cold area) + egg noodle
Japan : Self serve - sushi (like california roll), you just put all the ingredients (cooked prawns, flying fish roe, avocado, carb meat, cucumber, sushi rice) on a big plate and some seaweed on another small plate, let the guest to roll the sushi - temaki themselves (don't forget the sushi soy sauce & wasabi)
Thailand : Spicy Pomelo & prawns salad, Pad Thai, stir-fried assorted vegetables
India : unchange
France : same but add french apple tart serve with vanilla ice-cream
Italian : Tiramisu (dessert)
Then.. you have salad & sushi as cold appetizers, beef stroganoff + chicken Tikka Masala, Naan bread and Basmati Rice + Quesadilla + Rack of Lamb Bourdelaise as Main Course, serve with stir fried assorted vegetables
I would like to have a cheese platter too, but you have 2 kinds of desserts (apple tart + ice-cream & tiramisu)
I would add a bottle of red wine + champange + homemade cocktail then end the meal with good quality coffee or hot chocolate
You would be real busy in your kitchen! (Below is a website for your reference) - step to step of how you prepare califorina roll, sushi rice
http://www.bento.com/trt-caliroll.html
http://www.bento.com/trt-sushirice.html
You can prepare Tiramisu, Basmati Rice, egg noodles a day ahead. The Thai salad / Pad Thai (fried noodle) & stir fried vegetables can be prepared within 1 hour.

I would skip the beef stroganoff, since it is a seriously heavy dish and you're serving SOOO much stuff that people are going to want to try some of everything. Then, so that you have something Russian, how about small russian pastries (which can be bought at a bakery saving you some time).
It all looks delicious, though (kudos!)

Wow, when is it? I'm on my way over. I would maybe add another country, and do something simple like Italy, and Italian Wedding soup.
