CRAB STUFFED MUSHROOMS
Serves 8 – 10 people (makes 40-48 stuffed mushrooms)

3 cups shredded Monterey Jack cheese (about 3/4 pound)
1/2 cup plain bread crumbs
1/8-teaspoon kosher salt
2 green onions, sliced thin
2 teaspoons fresh Basil finely chopped
12 drops Tabasco sauce
2 tablespoons dry white wine
2 tablespoons fresh lemon juice
1 small clove garlic, crushed
1 large egg, lightly beaten
1-pound fresh crab meat
48 medium-sized button mushrooms
Cooking oil

In a medium bowl, combine the cheese, breadcrumbs, salt, green onions and basil. In a separate, smaller bowl, combine the Tabasco sauce, wine, lemon juice, garlic and egg; add to the breadcrumb mixture. Add the crab meat to the bread crumb mixture and mix gently until well blended. Refrigerate for at least an hour, or overnight.

Pre-heat the oven to 400° degrees F. Carefully remove mushroom stems out of the caps. (Reserve the stems for
soups or salads.) Wet your hands with cold water, take a small handful of stuffing in your palm and mold into a round ball. Place the stuffing firmly inside the mushroom cap, being careful not to break the mushroom.

Place the stuffed mushroom on an oiled cookie sheet. Repeat until all the mushrooms are filled, placing them on the cookie sheet without touching each other. (At this point, the mushrooms can be refrigerated and baked later.) Bake for 15 – 20 minutes or until the stuffing is lightly browned and serve.

Jimmy Dean bulk sausage milk one small package
1 tablespoon curry powder
1/2 cup crackers crumbs
chopped one tablespoon each: parsley, basil, dill weed, 1 teaspoon fennel seed
1 egg
1 tablespoon soy sauce

Mix it all up and stuff the mushrooms then top with either cracker crumbs or Japanese panko crumbs

Bake 350 for 25 mins

Below is my recipe for stuffed button mushroom.

<<<<<< Baked Ricotta Mushrooms >>>>>> Makes 10

10 large mushroom (stems removed)
1 tablespoon grated Parmesan cheese
1 tablespoon dried breadcrumbs (whole wheat bread or oat bread)

Ricotta and herbs filling
1/2 cup reduced-fat ricotta cheese
3 sun-dried tomatoes, soaked in warm water until soft, chopped
1 tablespoon finely diced red onion
1 tablespoon chopped fresh basil
1 tablespoon snipped fresh chives
1 teaspoon lemon juice
freshly ground black pepper

1) Preheat oven to 180 degree C / 360 degree F/ Gas 4. Line a baking tray with nonstick baking paper. Set aside.
2) To make filling, place ricotta cheese, tomatoes, onion, basil, chives, lemon juice and black pepper to taste in a bowl. Mix to combine.
3) Spoon filling into mushrooms. Place on prepared baking tray. Combine Parmesan cheese and breadcrumbs. Sprinkle over mushrooms. Bake for 10-15 minutes or until filling is set and top golden

We put shrimp paste or chicken paste as filling for dried shitake mushsoom.

10 dried shitake mushroom, soak in water till soft, remove stems, boil in water for 10 minutes.
20 shrimps, shelled, minced
1/4 egg white, slightly beat
salt and pepper to taste
1 teaspoon cornstarch
1/4 teaspoon sugar
1 teaspoon coriander leave (as garnish)
1 teaspoon sesame oil

Brown Sauce
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 tablespoon cooking wine
1 teaspoon of sugar
1.5 teaspoon of cornstarch
1 tablespoon of chicken stock

1) Marinate shrimps paste with a bit of salt & pepper & sugar & cornstarch & egg white, combine till smooth, set aside (15 minutes)
2) Mix brown sauce ingredients in a bowl, set aside
3) Stuff shrimp paste on mushrooms, stick 1 coriander leave in the middle, place on a plate & steam for 8 minutes or till cook.
4) Heat frying pan over medium heat, add 1 tablespoon of oil, a clove of chopped garlic & a slice of fresh ginger, stir fry till frangrant, add brown sauce mixture in and heat till the sauce is thickened.
5) Add a few drops of sesame oil, then pour the sauce on stuffed mushrooms. Serve hot with steamed rice.
