I always thought that it was formed as a chamical reaction when lemon juice or vinegar was added to it. Which is right?

No. You are thinking of buttermilk. Cottage cheese is made by different processes of pressing and washing and so on. Recipes calling for buttermilk will tell you that if you don't have actual buttermilk, you can make your own by adding vinegar or lemon juice to regular milk.

Spoiled milk curdles, it does not turn into cottage cheese. If you leave it in ther long enough, it will look like cottage cheese.
