I have a wheel of Brie, never been opened, in the refridgerator. How long will it stay good? I want to keep it for a special ocassion, but I don't want it to go bad first.

My house? a About thirty minutes!!!!

We can store cheese for up to about 6 weeks, maximum, really, because the temps in the average home refrigerator change too much due to door openings!

Then, the molds and spores and fungi that many of us keep under our sinks, and in the coils of the Fridge, and around the garbage we store there, and in the drains in the dishwasher, all seem to zero in on the cheese!

Cheese is inexpensive enough that I won't risk my health storing it until it sours and is moldy!

I have purchased Brie that is passed its date. It is fine. If it has mold on it when opened it can be removed. Several months at refrigerator temp should be fine.
