Soft Sugar Cookies
INGREDIENTS
2/3 cup shortening
2/3 cup butter
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup granulated sugar for decoration
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.
Of course the most simple sugar cookies to make are bought from the store where you just slice the dough and bake!

Sugar Cookies
Ingredients:
1/3 cup butter or margarine, softened
1/3 cup shortening
3/4 cup sugar
1 teaspoon baking powder
pinch salt
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
granulated sugar, colored if desired
Directions
Beat butter and shortening thoroughly with an electric mixer or pastry cutter.
Add sugar, baking powder and a pinch of salt and mix until well combined.
Beat in egg and vanilla then as much flour as you can with the electric mixer.
Stir in the remaining flour.
Cover and chill for at least 1 hour;
Split the dough in 1/2 and roll one half at a time. Cut out with Valentine cookie cutters.
Keep the piece you aren't using in the fridge.
Bake on ungreased cookie sheets for about 7 to 8 minutes, until edges are firm and bottoms are lightly browned (don't over cook).
Everything in my house is cooked at 325 degrees F and these are no exception *laugh*
Makes 36 cookies.

1 1/2 cups confectioners' sugar
1 cup butter
1 egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour

1 teaspoon cream of tartar
Mix sugar and butter. Add the egg and vanilla, mixing thoroughly.
In a separate bowl, mix together dry ingredients. Blend into butter mixture.
Refrigerate dough 2 to 3 hours.
Preheat oven to 375 degrees F. Divide dough in half and roll 3/16 inch thick on floured surface.
Cut dough with cookie cutter and sprinkle with sugar.
Place on lightly greased cookie sheet and bake 7 to 8 minutes or until delicately golden.

Sugar Cookie Cutouts
1/3 cup butter, softened
1/3 cup shortening
¾ cup granulated sugar
1 teaspoon baking powder
Dash salt
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
In medium bowl combine butter and shortening; beat with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping side of bowl occasionally. Add egg and vanilla, beating until combined. Beat in as much of the flour as you can with the mixer. Using wooden spoon, stir in any remaining flour. Divide dough in half. Cover; chill about 1 hour or until easy to handle.
Working with 1 portion of dough at a time, place on a lightly floured surface; roll to a ¼-inch thickness. Cut out with desired 2 ½- to 5-inch cutters. Place cutouts on an ungreased cookie sheet.
Bake in 375*F oven for 8 to 10 minutes or until edges are firm and bottoms are very lightly browned. Cool on cookie sheet 1 minute. Transfer cookies to wire rack; cool. Frost and pipe cookies as desired.

Vanilla Sugar Cookies
Ingredients:
4 cups sifted unbleached flour
1 teaspoon baking soda
1 teaspoon salt (optional)
1 cup unsalted butter
2 cups sugar
2 eggs, separated
1 tablespoon pure vanilla extract
1 cup buttermilk or sour cream
Vanilla sugar
Instructions:
Preheat oven to 350 degrees
Sift flour with baking soda and salt; set aside. In a large mixing bowl cream butter with sugar, egg yolks and vanilla extract until light and fluffy. Stir in flour mixture alternately with buttermilk, beginning and ending with flour. Blend well. In another bowl beat egg whites until stiff but not dry. Fold into cookie batter.
Drop by tablespoonfuls onto greased cookie sheets. Spread and shape cookie on back of spoon into a 2-inch circle, 1/2 inch high. Sprinkle generously with vanilla sugar.
Bake 12 to 15 minutes, or until golden around the edges. Immediately remove to rack; sprinkle again with vanilla sugar and cool completely.
Makes 3 to 4 dozen cookies.

1 cup of butter

1 cup of sugar (and some extra for pressing)
1 cup of powdered sugar
1 tsp. vanilla
1tsp. baking soda
1 tsp. cream of tartar
4 ½ cup of flour
Preheat oven to 375°F.
Mix butter, eggs, oil, powdered sugar, and sugar.
Mix in vanilla extract, baking soda, cream of tartar, and flour.
Roll the dough into balls. Place the dough on the baking sheet.
Dip a glass in sugar and press down the dough. (You can moisten the bottom of the glass with a wet paper towel to make the sugar stick.)
Bake for 9 minutes. (Anywhere between 8 - 10 minutes.)
