Beans are the easiest they grow fast and they are almost impossible to mess up. beans are easy and are big enough that the kiddos will not lose them as easy. If they like doing experiments try planting some in the light and in the dark or if you put paper towel on a cookie sheet put beans down put another paper towel on top of those and water them with a spray bottle it is a good experiment.

sunflower seeds....they grow fast and can be planted outside once the weather allows and then the kids can marvel at the size of the plant (my son use to grow them every year and we have some pictures of him standing next to his "super flower", which always towered over him). Oh, and don't use the seeds that you snack on...they have been cooked and don't work. He always got his seeds from birdseed in his grandma's feeder.

beans are the easiest, using damp papertowel, in a ziplock baggie, or clear plastic cup.
prettiest is to plant marigolds, they grow fairly quickly and easily, plant them in small food containers covered with contact paper or use small pots (you can have the children paint them)
the rest of the items mentioned take wayyyyyyyyyyy to long to germinate and the children become very bored or give up on them, but they make good classroom or garden projects radishes grow fast, as do the vines for pumpkins, and tomatoes

Lima beans are great because they are large enough for the children to handle, they grow quickly and are fun to watch grow on the side of the jar-push them into the dirt right on the edge of a jar or clear plastic cup.

Beans! any kind will do Pinto, Northern, etc. and they grow fairly fast. Simply plant them in plastic cups. You could even use clear plastic and you will be able to see the roots grow!

Try veggies. Peas, carrots and pumpkins grow well inside. Just be sure you have enough space for the pumpkins
