I'm getting married soon and want to start collecting some awesome recipes for my future hubby...

What are some really amazing dishes that i can whip up after a long day at work? Thanks! happy monday.

This is called mexican surprise I make this all the time for my hubby he loves it.

2 lb ground beef or lean
1 can cream of mushroom
1 can of green chiles
1 bag of cheese doritos
2 bags of Kraft mexican four cheese
1/4 c water

Heat oven to 350F

Layer cookie sheet pan with Doritos chips enough to cover bottom.
Season and brown hamburger meat then drain.
Put hamburger meat back in skillet and mix cream of mushroom in add 1/4 cup of water to make creamy.
Spread mixture over chips from end to end then spread chiles over mixture.
Sprinkle cheese on top to cover meat and chips so nothing is seen but the cheese. That's why it's called surprise because you don't know what's under the cheese :)

Place pan in oven until cheese melts enjoy.

Boil chicken pieces with an onion for 20 minutes ,
add 2-4 washed and quartered potatoes,
boil another 15 minutes,
place chicken and onion and potatoes in baking dish with a little 1/2 to 3/4 cup of the broth and add salt, pepper and garlic powder to everything in the baking dish.
Then you can, if you like squeeze lemon or lime juice on all of this when it comes out of the oven after about 20 minutes.
You don't have to though.
This chicken dish is so moist and delicious!

Actuallly this will work out great for you since it cooks while you are at work (well at least the main course)....

In the morning before you leave for work put a whole chicken (cleaned) in a crock pot with a small bag of baby carrots, and 1 medium onion quartered...then scoop one (12-16 oz) jar of Apple Jelly over the top...cover and let it cook all day while you are at work. The juices from the chicken can be made into an awesome gravy....and poured over (cooked) instant rice (for something quick) or mashed potatoes if you have time...and viola you have an entire meal just about ready and waiting when you get home.

Stove Top Chicken Casserole

1 6oz package Stove Top for chicken
1 cup hot water
1 1/2 skinless boneless chicken breasts
1 can cream of chicken soup
1/3 cup sour cream
1 1/2 cups shredded mild cheddar cheese
1 16oz bag california blend vegetables, thawed

Preheat oven to 400. Spread 1/2 cup of dry Stove Top on the bottom of a 13x9 baking dish. Mix the remainder stuffing and the water in a bowl until moist, set aside. Cut chicken in 1 inch cubes and put in pan. Mix together soup, sour cream, cheese and vegetables and spread evenly over chicken. Top with stuffing. Bake for 30 minutes or until chicken is cooked all the way through.

Super quick and easy...my husband loves this recipe! Also try with shredded mozzarella cheese instead of cheddar cheese.

Steak Sandwich 1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound 1/2 t. coarsely ground black pepper Salt to taste 2-3 T. oil 2 T. chopped onion 4 oz. crimini mushrooms, cleaned and chopped 1/2 t. thyme 1 loaf French or Italian bread, or 1 Vienna loaf 3-4 T. prepared mustard Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water. Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

My fave easy peasy beutiful my boyfriend thinks I worked on it all day dish is a super simple pasta. So just make whatever pasta you like- I prefer like bowtie, something that can stand up to big flavors. and while my pasta's cookin I put olive oil, red pepper flakes and garlic in a sautee pan on a pretty low setting and chop up some jarred roasted peppers (I use the kind that has red yellow and orange all in one jar and just do a little of each) some sundried tomamtoes, some kalamata olives and throw all that in with the olive oil. after that's cooked enough to make the whole house smell delicious I throw in some fresh spinach (you can use whatever veggies float your boat) and toss the whole mixture in my noodles and top with feta cheese. It's killer and since we're poor from I appreciate how inexpensive it is! If I feel like it I spruce it up with some chicken or tofu or shrimp. Hope you try it- My man thinks I spend all day cookin when I make it!

Here's a good one that came from my Great Aunt Helen. It's easy to make, great to eat at this time of year and most people have this stuff on hand around the house. this is great "Man-food" and he'll love you for this one!...

Chili

2 Lbs ground beef (80/20 is best)
1 Tbsp canola or corn oil
1 large yellow or Vidalia onion, diced
2 cans campbells tomato soup
1 can diced tomatoes
1 large can or 2 small cans red kidney beans
Chili powder, to suit your taste (spicy, but mild)
Cayenne Pepper, to taste (hot)
salt, to taste
sugar, to taste

Fritos and shredded cheddar cheese as a topping

Brown the onions over medium-high heat in a frying pan until they are soft and translucent. Set aside. Get a 2 Qt or larger pot and brown the ground beef on medium-high heat with 1 tablespoon of canola oil. Once the beef turns browned or grey-ish colored, drain the fat from the ground beef and discard. In the same 2 Qt pot with the ground beef, add the onions, tomato soup, diced tomatoes, and about 2-3 tablespoons of a mild chili powder. Simmer for 1 hour over very low heat. About 10 minutes before serving, drain the red kidney beans and add them to the pot. Cook for another 10 minutes.

Season with salt, pepper and cayenne pepper to suit your taste.
Don't forget the shredded cheddar cheese and fritos as a topping!

Here's an idea for you. If you are sending out invitations to your wedding, enclose a note indicating that you would love them to share a personal favorite recipe. This WILL be special because then you will have recipes from friends and relatives, and they should be good and it would be very personal. Or, if you are having a shower, ask each guest to bring a recipe card, if you don't want to do the wedding invitation thing)
I have many, many wonderful recipes, but I wouldn't know which one to share unless I knew what your taste was/spicy, not so spicy, European. etc/.etc/. Write me, I'm happy to share.--like sweet and sour meatballs, pot roast, etc......

Shrimp or chicken curry with peas & pineapple:

Warm 1 tablespoon curry & 1 of cumin in oil
Saute 1 pound of boneless chicken strips or 1 pound of frozen, deveined shrimp in the oil . . .
Add 1 pound bag of peas and
1 20 oz can of pineapple chunks .
Heat all the way through and serve.

For gourmet time, cut up fresh pineapple .

Two of our faves:
Shepherd's Pie-
Mix 1 lb browned ground beef with one can of vegetable soup. Add a PINCH of thyme. Put mixture in bottom of casserole dish and cover with mashed potatoes, then sprinkle some shredded cheddar cheese on and bake for 20 min. at 350.

Chicken Valentino-
Saute in butter 1 chopped up red pepper and white part of a bunch of green onions (save the green part to chop up for scallions.). Butterfly 4 boneless, skinless chicken breasts, fill with pepper/onion mixture, top with shredded italian cheese, sprinkle on some italian seasoning and fold closed. (You can use a toothpick to secure the breasts closed). Bake at 350 for 30 minutes. Top with scallions. (I serve this with oven roasted red potatoes as a side)
