Sugar Free Fudge Recipe
Ingredients
16 ounces cream cheese, softened
2 unsweetened chocolate squares (1ounce each) melted and cooled
1/2 cup sugar substitute (aspartame sweetener)
1 tsp vanilla extract
1/2 cup chopped pecans
Instructions
In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.
Yield: 16 servings

Creamy Rich Fudge
1-1/2 cups Equal Sugar Lite
2/3 cup evaporated 2% milk
2 tablespoons stick butter
1/4 teaspoon salt
2 cups miniature marshmallows
1-1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla
Combine Equal Sugar Lite, evaporated milk, butter and salt in a medium size heavy saucepan. Bring to a full rolling boil over medium heat, stirring frequently. Boil and stir 5 minutes. Remove from heat. Stir in marshmallows, chocolate chips and vanilla until completely melted and smooth. Pour mixture into foil-lined 8-inch square pan. Refrigerate at least 2 hours or until firm to the touch. Remove foil from pan and fudge. Cut into squares. Refrigerate any remaining fudge. Makes 49 servings

Super easy fudge
1/4 c. diet butter
2 oz. unsweetened chocolate
24 pkgs. sweetener
1 tsp. vanilla
1 (8 oz.) pkg. reduced calorie cream cheese, softened
1/3 c. nuts, chopped
Melt butter over low heat, add chocolate and stir just until melted. Remove from heat and stir in sweetener and vanilla. Combine chocolate mixture with cream cheese and beat until smooth. Stir in the nuts and spread mixture in a lightly greased 8 inch square pan. Refrigerate until firm. Cut into 1 inch squares. Store in refrigerator. Makes 64 squares.

Although they are out there, there is one basic fact working against you . . .
Chocolate is bitter and sugar substitutes don't really taste as good .
There are a few that almost taste normal but the process costs about 5X what regular fudge does.
I now make regular fudge with very large walnut quantities (less fudge per piece) and advised my father to eat small portions.
The biggest challenge is for diabetics to "get over" the sugar cravings altogether, which is easier if they switch to treats that are not chocolate based.
