i go with prawn cocktail too, if you want to liven it up a bit put it with avacado....mmmm yum

Pate. So simple, and quick to make and serve. Try this recipe and everyone will think you are really clever for making it yourself!
It also doesnt cost a fortune to make which is handy when you are cooking for 10!

Smoked mackeral pate:
Buy packs of smk mackeral, mash up and remove and bones/skin.
Add couple of packs of cream cheese (Philadelphia) add some orange juice (just a splash) a good glug of brandy or sherry (or similar - vodka works quite welll) add the grated rind from an orange and a lemon. Loads of black pepper and garnish with capers and a sprinkling of nutmeg.
Serve with melba toast and butter on a bed of salad.

Or for non-fish eaters:
Buy a few packs of ready made pate from the supermarket. remove from pack and mash up with some double cream, a good glug of brandy, some orange juice and the grated rind from an orange. Plenty of grated nutmeg, some black pepper and a little salt. Garnish with whatever you like and serve with little cornichons, some salad leaves and some melba toast and butter.

Tagliatelli Salad
You need:

180 g salmon, 100 g button mushrooms, 1 1/2 lemon, basil, dill, 2 tomatoes, 1/2 garlic clove, black olives, 200 g fresh tagliatelli, 6 tablespoons olive oil, 1 crottin of fresh goat cheese, salt, pepper

Boil the fresh tagliatelli 3 to 4 minutes in salted boiling water.
Drain and put aside.
Slice the salmon in thin slices.
Place them on a dish.
Sprinkle with the juice of a lemon and olive oil.
Add the chopped dill and leave to marinate in the fridge.
Wash and thinly slice the button mushrooms.
Very thinly chop basil along with garlic and olives.
Add 3 tablespoons of olive oil and season with salt and pepper.
Monder the tomatoes, peel them, seed them and crush them.
Season with 1 tablespoon of olive oil, salt, pepper and add a bit of chopped basil.
Mix the cold tagliatelli with the basil and olive sauce.
Add the marinated salmon and the diced goat cheese.
Place the tomatoes on top and decorate with a few leaves of fresh basil.

Get a load of ready-to-eat smoked mackrel fillets, take the skins off then blend the flesh up in a blender and add creame fraiche, enough to get it into the consistency of a mousse. Squeeze of lemon, salt and freshly ground black pepper to taste. turn out the paste into small dishes. garnish with dill or something and serve with small slices of warm toast. very nice indeed!

Asparagus wrapped in parma ham, baked in a hot oven for 5-10mins until ham is crisp, you can top off with flakes of Parmesan.
Very easy and simple and also Delicious, can be prepared the night before.

Fresh plum tomatoes sliced thin, with slices of fresh Mozzerela cheese, chiffonade fresh basil, Drizzel olive oil on the alternating tomato and cheese slices - sprinkly the basil and a few red pepper flakes - everyone loves this

Serve on a big platter and let them help themselves

Deviled eggs.
A relish tray - carrot and celery sticks, olives, cheese cubes.


"Chutney Dip" - 1 cup

1 cup (8 oz.) plain yogurt
3 tbsp. chutney
2 tbsp. chopped green onions (scallions)
1 tsp. curry powder
1 medium green pepper
Assorted fresh vegetables (cherry tomatoes, cucumber rounds, celery sticks, pepper strips)

In small bowl, combine yogurt, chutney, onions and curry powder. Cover and refrigerate 2 hours. Cut top off green pepper; remove seeds and membrane. Fill with dip and serve with vegetables.


"Marinated Mushrooms" - 3 cups

1 lb. small fresh mushrooms
1 small onion; thinly sliced
1/3 cup white wine vinegar
1/3 cup vegetable oil
1 tsp. salt
1 tsp. ground mustard

In large saucepan, combine all ingredients. Bring to boil over medium-high heat. Cook, uncovered, 6 minutes, stirring once. Cool to room temperature. Transfer to a bowl; cover and refrigerate overnight.

King Prawns in breadcrumbs with sweet chilli dip - just buy it readymade from decent supermarket, takes 10 mins oven and hey presto it's delicious with sweet chilli sauce.
Ok it's not cold - pate and toast, smoked salmon, mozzarella, tomato basil?
