Easy Pasta Salad

1 bag tri-color spiral pasta
1 small package pepperoni
1 medium red onion
1 large tomato
8-ounce block cheddar cheese
1 can sliced black olives
1 bottle Italian dressing

Cook pasta according to directions. Cut pepperoni quarters. Chop onion. Chop tomato in cubes. Cut cheese into small cubes. Drain olives.

Put all ingredients into large bowl. Toss to mix. Add dressing to taste. I usually use about 2/3 of a bottle. Toss again to coat all ingredients. Seal and refrigerate

Luncheon, so they will be wanting a little meat in it.Take the colored noodle & cook.Rinse and drain well.Add black olives, green olives,red onions,shredded cheese,chopped up pepperoni or summer sausage,baby tomatoes,and use raspberry vinagarette as the dressing.Add the dressing and let sit in fridge a while before you serve.DELICIOUS,you pick the amount to use depending how any are coming.

Pasta salad is my favorite... hard to decide.

For a luncheon, this would be pretty in a big glass serving bowl. Add any veggies you like, or medium-shaped pasta..


Layered Picnic Pasta (Bow Tie) Salad
Serving Size : 6

12 oz. Bow Ties or other medium pasta shape
1/2 cup vinaigrette salad dressing
1 cup frozen green peas, thawed
3 plum tomatoes, sliced (or cherry tomatoes)
1 cup fresh mushrooms, sliced
2 oz. proscuitto, thinly sliced (or ham)
2 tbsp. fresh basil, chopped
3 tbsp. parmesan cheese, freshly grated

Cook pasta according to package directions, drain. Return to cooking pan and toss with 2 tablespoons vinaigrette dressing. (I use more dressing)

Transfer half of pasta to a clear glass bowl. Layer peas, tomatoes, mushrooms, and proscuitto on pasta. Top with remaining pasta. Sprinkle with basil and pour remaining dressing evenly over salad.

Sprinkle with Parmesan cheese. Serve at once or cover and chill until ready to serve. Toss right before serving to evenly coat dressing.

Seafood pasta salad was a hit at our recent potluck.

It's made is the usual pasta salad ingredients mayo, onion, bell pepper, pasta, and you add 1 can (drained) of white crab meat, and 1 can (drained) of salad shrimp. Lobster or salmon can also be used.

"Creamy Italian Spiral Salad" - 30 (3/4 cup) servings

2 (16 oz.) pkgs. multicolored spiral pasta
1 medium bunch broccoli; cut into florets
1 medium head cauliflower; cut into florets
1 (10 oz.) pkg. frozen peas and carrots; thawed
2 cups cherry tomatoes; quartered
1 cup shredded Parmesan cheese
6 green onions (scallions); chopped
1/2 cup chopped green pepper
1 (2 1/4 oz.) can sliced olives; drained
2 (16 oz.) bottles creamy Italian salad dressing

Cook pasta according to package directions; drain and rinse in cold water.
In large bowl, combine pasta, broccoli, cauliflower, peas and carrots, tomatoes, Parmesan, onions, green pepper and olives; add dressing and mix well. Cover and refrigerate 2 to 3 hours or until chilled.

I made an excellent one with penne pasta, smoked salmon (lox) a little thyme and cream. That's all it takes and it looks elegant.
Cook the pasta
Slice salmon into thin strips and mix the thyme (2-3 fresh sprigs)
Melt 2 tablespoons of butter, stir in the cream (2/3 cup thick single cream). Add the salmon and thyme to it. Heat 3-4 minutes. Toss drained pasta with cream/salmon sauce.

COLD PASTA SALAD

rainbow rotini, cooked according to directions
celery, medium diced
cucumber, medium diced
green pimento stuffed olives, medium diced
green pepper, medium diced
tomato, medium diced
Kraft Zesty Italian Dressing


Mix together rotini, celery, cucumber, olives, green pepper, tomato and dressing. Refrigerate until chilled.

use "vegetable" flavored and colored pastas. add chopped apples, hicama, raisens, mayo and turmeric!
