On every recipe with Meringues they never add food coloring. Is it because it will mess up the recipie? Will it fall apart when baked?

You could but the meringue might collapse. You really shouldn't use food coloring on anything that has a high content of egg whites, like meringue, angel food cake, wedding cake, etc. because the egg whites are very "sensitive", especially after you beat them to make them fluffy. If anything else besides sugar and cream of tartar, (which stabilizes the egg whites) is incorporated into the mix (if the bowl isn't completely clean too) the egg whites are prone to collapsing, and you won't get the fluffy consistency that you desire...

You can color the meringue, but remember that using liquid food color will dilute your recipe. Best to use gel color or powdered color for the most vibrant colors.

Use color paste sparingly. You can deffinately dye Marangs. Just remember that it will propibly turn out like pastells.

You can use food colorings and it will be fine. Use sparingly, as you can only get pastels anyway.

You can use the colouring but you will need the granulated sugar.
