Practical real life skills class. I know so many people my age who do not know how to write a check. It's sad really. At my high school, they had a class that was kind of like a life skills class that taught everything from credit cards, buying a house, raising a family, dealing with the law system, etc. It was pretty cool (though I didn't get to take it )

When I was at high school in New Zealand we spent a major part of one year of maths doing quadratic equations which I now think was wrong. I think it is almost the most useless piece of mathematics around. As far as I know it's only practical use is calculating trajectories for artillery shells. There are much more important things to learn which would have actually been valuable like linear algebra and sampling for statitics.

A general law class, especially with respect to traffic law. There are too many parents going broke because their kids thought it was legal to speed as long as it is in the flow of traffic. Do you know the largest sized knife you can carry on your person in your state? I don't but I sure would like too. 18 year olds should not become sex offenders because they don't know the age of consent. We live in a society governed by rules and laws and the fact is not all of them are common sense- it would be nice to know which ones screw us tax payers out of the most money.
Runners up include general anatomy: I know adults who don't know the difference between a cervix and cervical vertebra.

Communication skills, particularly those pertaining to listening:
Robert Carkhuff's http://en.wikipedia.org/wiki/Robert_Carkhuff _The Art of Helping_ http://www.amazon.com/Helping-Century-Carkhuff-Robert-Helping/dp/0874255309/sr=8-1/qid=1166481717/ref=pd_bbs_1/105-7549231-7088465?ie=UTF8&s=books, which I encountered in a class for those in helping (social) services deals with much more than listening. His basic model is invaluable to EVERYONE.
One that covers many topics is _Messages_ by Matthew McKay, Martha Davis, Patrick Fanning http://www.amazon.com/Messages-Communication-Skills-Matthew-McKay/dp/1572240229/sr=1-1/qid=1166481804/ref=pd_bbs_sr_1/105-7549231-7088465?ie=UTF8&s=books
I'm also a fan of NLP (neuro-linguistic programming).

It's been awhile since I was in high school, but I think everyone should be able to touch type and at least have basic knowledge of Win, Word, and Excel. It's what's used in most workplaces.

How to deal with stress positively. William Glasser wrote a great book, _Positive Addiction_: http://www.amazon.com/Positive-Addiction-Harper-Colophon-Books/dp/0060912499/sr=1-1/qid=1166482069/ref=pd_bbs_sr_1/105-7549231-7088465?ie=UTF8&s=books

Marriage for Moderns. Almost everyone gets married, but not everyone has to learn about it in school.
Household math. Everyone has to fill out a form 1040, but not everyone learns about it in school.
Practical computer skills. 'nuff said.
Washing. If your parents don't teach it at home, and you don't learn about it in school, how will you know? (See Alice in Wonderland).

Communication skills. We can be taught to speak any language correctly but to actually communicate our thoughts and feelings intelligently to other human beings is often a problem in this world.
