here is a great website.just go to the search and type in prime rib.u can change the servings nd it will automatically change how much u need.this is the only site i use.

Martha Stewart says 1/2 pound per person of something with bone in, but since you are having both I would have 1/4 lb per person prime rib and the same with the ham if it is bone in. Talk to a butcher at your local shop, they are the experts. This is just a guess and I usually make too much.

Prime rib about 1/2 -3/4lb per person, (usually about 12-15 ribs) The ham depends on what type. A spiral I would go about 12-14lbs. That should be plenty.

6oz per person is standard with sides but figure 10oz to be on the safe side. Ribs will move more than ham. Easiest would be to buy them prepared at a deli/restaurant - they have it all figured, from experience, just how much you will need. Stick them in a warm oven (about 170) well before you want to serve.

If you are having lots of side dishes, then a pound (cooked) will feed 4 people. So you need 6 lbs. altogether, divided however you decide.

I would buy 50Lbs of ham and 50lbs of prime ribs.
That should be good for two good meals.
