Of course, I'd love to make guerilla cookies, but no one knows how. And I know I can't make those without sugar.

Sugar Free Lo-Fat Oatmeal Cookies

1 cup "Old Fashioned" Quaker Oats
3/4 cup flour
1 level tablespoon baking powder
1/3 cup Sugar Twin (white or brown)
1/2 cup raisins (or other dried fruit in small pieces)
Mix well to coat the fruit, and then add:
6-oz jar of strained plums
1/4 cup "Best of the Egg" or "Egg Beaters"

Mix well; drop by large serving spoonfuls onto a
foil-covered baking sheet; and bake in a pre-heated
350-degree oven for 12 to 15 minutes, until lightly
browned on top. (They don't spread much, so you
can put them fairly close together.) Let cool before
packing, because they'll sweat.

These aren't crisp; they're sort of cake-like. I make
them large -- about 3" in diameter. I don't think they'd
keep very well, so if you want to store them for longer
than two or three days, it would be best to put them
in the 'fridge or freeze them. Also, if you want more
flavor, you can add 1/2 teaspoon of cinnamon or vanilla.




SUGAR FREE OATMEAL COOKIES

1 c. whole wheat flour
1 c. oatmeal
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/2 c. raisins
1 c. unsweetened applesauce
1/4 c. water
1/3 c. vegetable oil
2 eggs
1 tsp. vanilla extract
1/4 c. chopped nuts
1/4 tsp. salt

Combine all ingredients in a mixing bowl. Beat well. Drop by spoonfuls onto a lightly oiled baking sheet. Bake in a 375 degree oven for 10 to 15 minutes or until browned. Makes 48 cookies.

3 cookies: 1 starch-bread exchange, 1 fat exchange, 126 calories, 15 grams carbohydrate, 3 grams protein, 6 grams fat, 66 milligrams sodium, 33 milligrams cholesterol.



SPICY OATMEAL COOKIES (SUGAR FREE)

1 1/2 c. quick cooking oatmeal, uncooked
1 c. reduced calorie butter, melted
3 eggs, beaten
1 tsp. vanilla
1 1/2 tbsp. liquid sugar substitute
1 1/4 c. all-purpose flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cloves
1/4 c. raisins
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. skim milk

Combine oatmeal and butter in large bowl; mix well. Add eggs, vanilla and sugar substitute. Stir until blended. Combine flour, baking powder, salt, cinnamon, cloves and nutmeg in bowl. Add dry ingredients and milk alternately to oatmeal mixture, blend well. Add raisins and set aside 5 minutes. Drop by spoon on non-stick cookie sheet. Bake 400 degrees for 10 to 15 minutes or until brown.

what if you used apple sauce and raisins for sweetness? Or perhaps some apple juice in place of liquid
