Don't make eye contact.

I totally understand. When I worked at a hospital I would keep running into the same people over and over in the halls and I would have the same problem. Entering, leaving, and then re-entering the same offices was no big deal because we would say "hello" or "good morning" once and leave it at that, we didn't feel the need to repeat it over each time, but there is something about passing someone in the hall. It just seems incredibly rude to walk passed someone w/o acknowledging them or they you.
Usually I would say good morning and every time after that smile and/or nod when eye contact is made.

I think it's nice that the person says hello each time. Why not just smile back? You don't have to say anything after the first hello.

It is so much better than rude people that are floating around being mean and hateful.

If your co-worker is name challenged, or has poor short term memory, they may not remember they had already greeted you for the day. You could be snarky and say "Hello again for the -- time!" or simply ignore it, secure in the knowledge that you have a superior mind.
If the greeting is at all troublesome or offensive, as you're at work, you may need management intervention, so be sure to document it.

Be polite. You don't want to hurt or insult them. If all they do is say hello, say hi back. It's that easy. But if they try talking to you, be quick with your answers and tell them you don't have time to talk.

Why would you want to stop that? All you have to do is say hello back.

Come up with a nickname for them, so everytime they say Hello, you can say " what's up there Vienna"

I used to call this girl Vienna because her fingers were short and stubby like Vienna Sausages.

explain to them that our idea that it is rude not to greet someone is an idea that people can get stuck in and contrast it with the oriental way of doing things where it seems that you greet people just once a day or not at all unless you have something to say
explain to them that the frequency of greeting needs to be negotiated like any other aspect of the relationship

you must be nodding to them. Like you are saying hello. Hello is just a response to you starring at them and they are being nice by not saying, "what the **** do you need?"

Be sarcastic and beat them to the punch. Jerks that say 'hello' step up to get knocked down. Don't put up with that crap. Talk to your boss and try to get them fired.

Don't make eye contact, and don't return the HI multiple times per day.
It may sound harsh, but eventually, they get the jist. :)
