It is actually ground up sheep inards (like intestines, etc) seasoned and stuffed in the stomach for cooking. It is actually not bad food. I'm not sure it is all that popular these days, just a traditional dish. Originally it would have been because when you live in an isolated area you take advantage of any bit of food you can get.
