You can Normally Tell if Blue Cheese is Off By The Furry Edges and If you are Familiar with this cheese then you would also notice a Dramatic change in smell.....Believe...!! :)

Your Stilton, Blue, Gorgonzola or what-have-you, will take on an acrid ammonia-smell. Think "uncleaned cat-box"... Ew!
The cheese rule is: "If it smells like pee, let it be". (It's not a popular rule, but accurate).
Prior to that point, just trim off anything that looks a trifle fuzzy and enjoy!

I had some crumbled blue cheese i could offered in a bathtub & questioned the comparable subject... until I opened it (it substitute into interior the refrigerator slightly too long) and it regarded fuzzy. yet another forgotten tub of gorganzola smelled like a mix of the main putrid *** scent mixed with lesion lined ft. the two tubs went directly to the exterior trash...
