Quick Orange Steamed Pudding
4oz butter or soft marg
4oz caster sugar
4oz self-raising flour
2 eggs
3 tbsp orange juice
Mix all ingredients & beat for 2-3 mins. Put a spoonful of marmalade or golden syrup in a 1.2litre/2 pint greased microwaveable basin. Add the mixture. Cover loosely & cook on HIGH for 5 mins. Leave to stand for 5 mins. Serve with marmalade or golden syrup.
You can vary this - for chocolate, use 3oz flour & 1oz cocoa and a drop of vanilla essence, use milk instead of the orange. Serve with Nutella!
Easy peasy.

INGREDIENTS
1/4 cup butter
1/4 cup white sugar
1/2 cup self-rising flour
1 egg, beaten
2 tablespoons milk
DIRECTIONS
In a medium bowl, cream together the butter and sugar until smooth. Mix in the egg and milk gradually, so as not to curdle the butter. Sift in the flour, and fold in gently. Transfer to a 1 pint microwave-safe bowl.
Cover, and cook for 3 1/2 minutes on full powder, or until the pudding appears set when gently jiggled, and the top is sticky. Serve hot.
