Is there any rule of thumb for making a quick bread recipe, but instead of using regular bread pans using mini loaf pans (5 3/4" x 3" x 2 1/8")? Can any quick bread recipe be made in the smaller loaves?

I dont' know of a solidly-tested rule of thumb, but start w/ cutting baking time in half. Then use a toothpick inserted in center to see if it's done (if pick comes out clean, it's done).

I do this all the time. My mini loaves take 20-35 minutes to bake, closer to 30, depending on the particular recipe. I would say start with 20 minutes and check each 5 minutes after that, then write down whatever you discover so you will know for next time. By the way, the same recipe in Texas size muffin tins takes about 5 minutes less than in a mini loaf pan.

Yes, just make sure to watch the time of baking, it should take way less.
