Having a mother-in-law and being Catholic myself, I can tell you that you had best know what she likes to do, especially if she is old school catholic. The price of the gift won't matter, the style of the gift won't matter either, to her, it's going to be all about the amount of thought that went into that gift. It may be hard, but only you or your husband are going to know the answer to this one. And think hard, it's probably the first thing that came to mind when you think of her. She's simplistic, so be realistic when brainstorming.

Well since she has everything then a gift card would be good. You can also try a nice neclace wit a cross, a rosary, or a scented candel.

Sign her up for a weekend retreat called TEC (Together Encountering Christ) It is a Catholic spiritual retreat that is a life-changing event. I'm not catholic and I enjoyed this retreat very much.

A holiday related item never fails. Especially for a woman who very religious. Try a cute new version of a nativity set or something of that nature.

Lace handkerchiefs are nice too with a sachet.
Find out her favorite perfume and gift her with some.
