Easy Enchiladas
Yield: 1 Servings

Ingredients

10 lg flour tortillas; (up to 12)
1 lb grated cheddar cheese
1 lg onion; diced
1 sour cream; lettuce, and
-other desire

Instructions

1 lb lean ground beef
1 cn tomatoes and green chilies
2 cn chili with beans or homemade
- chili


Brown meat. Add rest and simmer about 1 hr. until thick

Enchilada Sauce: Saut, 1/4 cup very finely chopped onion in 2 Tbsp oil. Add
1 can enchilada sauce, 1 can tomato paste, 2 - 3 cans water, 1/4 tsp. each
oregano and cumin, 1 or 2 Tbsp chili powder, dash of garlic powder. Simmer
until filling is done.

Place 1/3 cup filling along with some grated cheese and chopped onion in
each tortilla. Roll up. Place with seam down in large greased baking pan.
When all are rolled and placed in pan, top with sauce, remaining onions and
cheese, and bake in 350 degree oven for 20 minutes.

Serve with a dollop of sour cream, lettuce, tomatoes, etc.

My chicken enchiladas area the easiest and great tasting. I always get compliments and no one believes how easy they are. EEasy to double the recipe to feel large amount of people and geat for carry in's.

3 cooked chicken breasts cut into bite size pieces
1 8oz package cream cheese
1 package Aztec flour tortillas
2 cans old elpasso mild enchilada sauce
2 cups chedder cheese.

While chicken is still warm, mix it with the cream cheese (easier to stir when cream cheese is room temp and chicken is warm).

Place one large spoonful of mix into each tortilla and wrap.

Place enchiladas in glass baking dish, cover with enchilad sauce.

Bake about 20-30 minutes at 350. Melt chedder cheese on top towards the end of the 20-30 minutes.

12 corn tortillas
1 28oz can of red enchilada sauce
2 cups (16 oz) mozzarella or queso blanco
1 1/2 cups meat (optional) shredded beef or chicken
2-3 tablespoons oil
PREPARATION:
Coat each tortilla with oil using your hands or a brush. Spread out on a cookie sheet or baking dish and bake in a 500 degree oven for about 7 minutes. Take out to cool until they are warm to the touch. The cheese can be shredded, or just cut into slices 3-4 inches long, and 1/4 inch thick. (Or thicker if you like them really cheesy.)

Pour just enough sauce in the bottom of a 9x13 glass baking dish to cover the it. Pour the rest of the sauce in a large bowl. Dip tortillas, one at a time, in the bowl to coat with sauce.

Lay the tortilla in baking dish and if you're using the meat, put in about 2-3 tablespoons. Place the cheese on top of the meat. Fold one edge over the cheese, then the other one, then turn the whole thing over, folded side down, in baking dish. Repeat for each tortilla. Sprinkle any leftover sauce and/or cheese on top of enchiladas.

Place in 400 degree oven for 15 minutes or until cheese is melted.

Simplest way is to buy a can of enchilada sauce and follow the recipe on side of can.

SIMPLEST is to not roll each on individually, but do them in layers, kinda like a lasagna. Put sauce, tortillas, filling lyer, tortillas, sauce, filling layers, etc. Then bake, cut intto squares to serve.
