It's a grain, like wheat or barley and any other types of specialised grasses. It is also a starch. It grows in paddy fields mainly in China and India. These fields are knee deep in water and human & cows manure.

Rice is a starch. It grows in paddy fields submerged in water. The pickers have to stand in water all day picking it in the harvest.
When rice is cooked with other vegetables,it absorbs the vitamins of the veg.so the nutrients aren't lost in the cooking

Rice is two species of grass (Oryza sativa and Oryza glaberrima) native to tropical and subtropical southern & southeastern Asia and in Africa, which together provide more than one fifth of the calories consumed by humans in their global diets.
Rice is a staple for a large part of the world's human population, especially in East and Southeast Asia, making it the most consumed cereal grain. Rice is the world's third largest crop, behind maize ("corn") and wheat.

It's a grain, a cereal. Seeing the plant it is a bit difficult to tell it from barley. It grows with a lot of water.
